So delicious and yummy I like the crunchy part my mom used to make it but she would make it with a fresh garlic and Jeff the meat and stuff it up and make us so yummy and then she would save the liquid and that was even better to cut the meat because of the liquid was already cooked well she also cooked the rice that went with it and the other goodies that she had thank you for sharing is so delightful to see that you have such an interest in the cuisine and a lot of people do not know about and should

My Puerto Rican family makes the pernil meat as hard as they can because they think it's good like that, but it's disgusting texture to me. I always thought I hated pernil but never knew you can make the meat soft. I made it myself one day and loved it.

Rule of thumb on how long to cook pernil is half its weight. So, 4 1/2 hours for 9 lbs.
