I’ve always wanted to try Pozole but I can’t never find it anywhere where I live. If I knew I wouldn’t get my lights punched out. I would ask one of the Mexican people that I know if they know how to make it and if they do, could they make me some. But I never do. Especially in today’s political environment.🍻

@@jasonbower7763 The video tells you how many of f each chiles. This is in the description box. For the Chile Sauce: 12 Chile Guajillos 2 Ancho Chiles 3 Chile de Arbol 3 Garlic Cloves 1/2 of a Yellow Onion 2 tsp of American Pitmaster OG (salt, pepper & garlic)
@jasonbower7763Ай бұрын
@@bz3548 @robertphillips3992 ...But what I mean is how much of the finished red chile do you actually put into the pot. He doesn't say anything about how many OZ to strain into the pot. He uses a measuring cup so I know he measured it out, but the video and the description do not say anything about it. We know exactly how much broth he put in with the pork, how much pork was used, how much water he used to make the red chile, how much hominy to use, etc... But we do not know exactly how much of the red sauce he used for the final pot. When I make red chile (and this goes for everybody) the final amount always varies. It's subjective how much water you use for it based off of many factors... But one thing is always true - I always have leftover red chile for whatever I'm making. This video/recipe implies that he used ALL of his chile mixture in the pozole... But it doesn't actually look that way... Why didn't he just pour it directly from the blender if he used it all? Why measure it out in a measuring cup? Depending on how much he used, the flavor can be drastically changed. I was wondering if there was a definitive answer to this, but alas, I fear there isn't.

I love making pozole and made it last week but…. Like was said in the video, I usually just simmer the meat. From now on, I’m going to sear it before simmering. 👍🏼 About the only things that I do differently is adding 4-5 cloves to the simmered chilis, onions and garlic before blending but also use about twice as many chili ancho. But as ArnieTex says, there ain’t no right way and there ain’t no wrong way…..👍🏼 There’s your way!

Looks delicious. Pozole is my number 1 comfort food. The pozole I grew up eating always had smoked pork hocks. The smokiness really adds some nice flavor. The first step is to make a big pot of stock using onion, patitas, and hocks. Then I pick out all the bones and mince the skins and meat bits from the feet. No need for any extra meat, the broth winds up so rich. Pig feet might be a bridge too far for KZbin, but definitely give smoked meat a try in your pozole, you won’t be sorry.

The pig feet are so good though, but I’ve only had them in menudo. If I make this recipe I’ll definitely add it.

Nice job browning the porko also. The last video I watched had some guy making stew and he sauteed vegetables BEFORE doing the pork. Of course all the water in the pan made it steam rather than brown. Always sad seeing a meat turn grey when it could have easily been crispy golden

Do you use canned hominy? I’m in New Mexico and all the stores carry a package in the freezer section that says “Pozole” it looks like hominy but it’s some spices already in it because it’s kind of reddish but no meat. I assume that would be the best hominy to use. Anyway, I love posole but have never attempted to make it because it’s a little intimidating but I think I’ll give this a try. Thanks for all the great videos, I think I’ve seen just about every one.
