So many TV chefs - each with a gimmick but only Delia really explains and teaches and keeps one's interest with her simplicity and no tricks. How I miss her programmes, but thanks for posting.

trained chefs don't like her much, BUT her tricks and recipes are a gem and always work. her tip of putting a bit of corn flour in the egg if it is going to be tempered in sauces is a life saver, not to mention her christmas cake and her yorkshire pudding. every time she performs as she should.

@@rebeccabrewer2221 tempering means to control the temperature of an ingredient. warm up the egg as not to coagulate before it enters some liquid. eggs can bring flavour and more texture to some sauces. (sauce anglaise) you can even let whipped cream come up to room temperature and bring down the temperature of a ganache and mix it with the fresh cream as not to lose air below 35 degrees and above 27! gets too technical now...

Search for Delia's sausage roll recipe if you want to see the flakiness of the pastry - she uses the same recipe/method. It is a decent recipe - the pastry is flaky but does not have lots of layers.

No layering its a quick flaky pastry and its actually very good especially for the likes of sausage rolls!

Many British people still use imperial weights and measures. And this was even more common 25 years ago when this series was made.
