Here in the UK the rhubarb is just starting to poke out of the ground so we have a little wait yet but as soon as I have rhubarb and we always have plenty I’m going to have a go at making rhubarb champagne, it looks lovely and what a way to use rhubarb!

why is vinegar used in this recipe and did you prime the bottles with sugar

A little vinegar helps the fermentation process. No I don't prime the bottles with sugar.
