Hello ma'am, thanks for sharing this recipe and I love the simple process to it too. I baked this recipe and my 6 eggs amounted to 349g approx 350g after I measured it with a scale. The cake tasted good but the sugar taste was very low. I feel the eggs i used was too much. Please what's the weight of an egg in this recipe without the shell? I want to bake it again. Thanks.

My recipes are always low sugar content. The eggs isn't why the cake was low in sugar content. You can modify it to suit your taste. Simply watch the video again, cos I remember talking about how a certain number gave me that measurement, from that can you can deduce the weight of each egg without the shell. Increase, the measurement of the sugar if that's what you like. Happy baking

Yes, it can be used for a wedding cake. It can last for months on end. Simply, wrap in cling film and freeze before covering the cake. Don’t forget to let it defrost completely in the cling film before covering it. That will help extend its shelf life. Fruit cakes when baked right can last for years in the freezer.
