The beauty of this recipe, is the low quantity of alcohol used. Some fruit cakes recipe stings the back of the throat, due to the heavy presence of alcohol.

Most fruit cakes are dry, but wrapping this and trapping the heat, ensures that does not happen.

Same applies to fruit cakes. Bake your fruit cakes, days before consumption. Let your fruit cakes, sit and mature.
Poke a few holes in the cake with a skewer, drizzle with brandy for more intense flavor, if you don't mind the taste of alcohol.

RECIPE
360g Mixed Pre-soaked Fruits (Cherries, Dried Mango, Almond Nuts, Dates, Dried mixed fruits etc.)
350g All Purpose Flour
250g Brown Sugar
250g Margarine / Butter
10g Mixed Spice
6 Eggs
2 tbsp Dark Treacle
1/2 the juice of Fresh Lemon
1/2 tsp Tangerine or Orange or Lemon Zest
250ml Dark Rum
2 tsp Baking Powder
100g of Cashew, Mixed Fruits toppings (optional)
