@Joel Hammer Pretty sure it's a Swedish thing. Partly 'cause of the name (Hasselback refers to the famous restaurant Hasselbacken in Stockholm). I also can't find any reference to it being danish online, and I've never heard any such claims previously. Though, it isn't that hard to imagine people discovering this little trick elsewhere as well.

You can achieve the same cuts into the potato if you place the potato onto the mouth of your wooden spoon. the sides of the mouth are naturally higher than the base so it won't cut through all the way. much easier process.

Swede here, keeping it super simple... I only have butter, salt and breadcrumbs. But that's the beauty of it all, whatever you like goes! I usually have it to a filet mignon, and some herb butter (actually made my very own parsley butter this weekend, for the first time churning my own butter from cream). Sigh, it's 1 AM and now I'm hungry again...

When you make a big batch. Like when you make it in a restaurant. It's easier to do it without anything but a knife. You get stuck with the knife in spoons and other things. Offcourse you have to have some knife skills. But you get it quite fast. And in Sweden we make a lot more cuts in the potatoe. About teen to twelve cuts in a normal sized potatoe

This simple but still good dish has a fairly young history. The origin of the Hasselback potatoes can be traced to the 1950s and a Swede It was the future chef Leif Elisson from the countryside who came to court during his education in Stockholm. The year was 1953 where Leif came to thinly slice the potatoes, cover them in butter and sprinkle breadcrumbs over it and then grill it in the oven. The name Hasselbackspotatisen is named after the restaurant where Leif was a cooking student. Namely restaurant Hasselback at Djurgården in Stockholm.

Pro tip, cut a little bit off one side and make it your bottom. The potato lies flat and is less likely to move or wobble when slicing. Season and cook those slices with everything else.

We created 'hasselback style' spuds before we even knew what they were and called them 'hedgehog potatoes' to get the kids to eat them. Rather simple, just sliced down, and then spread soft garlic butter over the top so it gets pushed into the gaps. Lots of black pepper and a little salt. Roasty roasty for a little time, and kids loved them with Kippers on the side.
