A friend of mine introduced me to Sam's channel a few years ago, at a time when I was pretty burned out on cooking. The first few episodes I watched were pretty straight forward, but the more I went down the rabbit hole I quickly learned that Sam is a man after my own heart. From not eating the same thing all the time to transforming leftovers in interesting ways. I've not missed an episode in over three years now and I have recreated his recipes multiple times, often putting my own spin on things. I now love to cook again and have even gotten into smoking meats because seeing Sam cook outside looked so enjoyable!

Longtime restaurant employee here. These are definitely acceptable as an appetizer. I can’t believe Sam didn’t mention poutine in his argument. Max is accurate with potatoes most commonly being a side to a lot of beef entrees. I think vegetarians would gladly make a meal of these.

The Evo grill is the absolute coolest kitchen item ever. It's like a huge cast-iron pan. I never heard of it until I found Sam's channel. I definitely need to get one at some point. It looks so satisfying to use.

Just perfect! Hasselbacken is a place in Stockholm, were that potato dish was founded, around 1953. Usually served with steaks and sauce. Great to see Sam taking the hasselback potato to a new level!

You could sprinkle into the butter/oil/smoked paprika mixture some ranch dressing powder for added flavor and as a thickener. I bet it would help with getting the spuds crispy too.

Sam thank you for all of the great videos this year. My family has a had a tough year. We have had 2 children diagnosed with Muscular Dystrophy, ADHD and one with autism. Our lives have been turned upside down. Your videos and cooking have made my oldest want to cook and be excited about making kitchen creations. Thank you guys for that. As for this video It is a side dish until the pulled pork or chopped brisket gets added. At that point we can call it an appetizer.

I’ve had loaded potatoes as appetizer in a steak house restaurant. So yes I agree with you those are way small so there for appetizers one bite there gone more then approved👌👌 wings are also offered as appetizers so there you go. Sam you rock. You’ve made me look like a freaking allstar in the kitchen. My wife and I are in our early fifties, and work in healthcare. About a year and a half ago I finally had to spill it to her where I’ve been coming up with all these great dishes the last few years. When Covid hit, my wife would take extras and leftovers to work the next day to share with her coworkers. Once restrictions opened up a bit, they started to want to meet me and have me over to cook for them so they could learn how to prepare their favorites. It was pissing her off and she was getting jealous that these young ladies in their twenties and thirties were so persistent and drooling over me. I just couldn’t take the credit for your creations. I’ve passed along a few of your masterpieces to my young sons when they really want to impress a lady. You sir are an artist and have been much appreciated in our household.
