Have you seen the newer version of the hand? I am going to build one of these, I do not want to do the pressure, sensitive fingertips, do you think the newer version is a better one to build even if I do not do the pressure fingertips?

newer version (I2) is an improvement over this. That includes self reset springs, pressure sensitive finger tips, better reaction time, more flexibility. If you are a begineer then i suggest just go for the normal version.

I used PLA filament for roughly just the hand and it weighed in about 200 grams, not sure what he used but it looks lighter

the servo motors are 180 degree or 360 ?

180, you wouldn't necessarily need 360's unless u plan on moving the fingers both to the palm and the the back of the hand
