Just coming in to say that I LOVE this recipe. I do a modified version of it for Halloween every year now; no onions and replace the chicken stock with water to make it vegetarian (family is allergic to onions) and blend it with a roux instead of Tahini sauce. A delicious and spooky way to get my vegetables :)

Its halloween night and I made this for my family. It came out great and it was the perfect color of green. It was hearty and filling and had a rich creamy flavor. I substituted the veggie broth for chicken broth because that is what I had on hand and added celery because I just love celery. Also I caramelized the onions and garlic (with the celery) beforehand so they would be a little less potent (the yellow onion I cut up was LOUD and needed a little simmering down). The biggest obstacle was the fact that I didn't have, and couldn't find tahini paste at the store. I'm not sure how comparable to the sauce they made in the video but I googled tahini substitutions and greek yogurt and hummus came up. So here is my impromptu recipe for tahini if you don't have any. Toasted Sesame seeds (I happened to have them on hand because I like to cook asian dishes a lot). You might be able to use a few drops of sesame oil but i'm NOT SURE if it would blend properly. A couple of spoonfuls of greek yogurt About half a container of plain hummus approx. 5 oz (I bought a 10 oz container, and used half of that) and then mix it with the garlic, lemon, and LESS water than it says, I used the amount that the recipe said and my sauce was a bit thin, it probably doesn't matter since its getting mixed together with the other stuff anyways but I thought I'd let you know.
