Caramel sauce is thicker while salted caramel is lighter in texture and the ingredients /recipe has some slight differences

Yes when you use condense milk it becomes caramel sauce and not salted caramel.

I cut the recipe in half exactly but mine turned out very watery. Good color but very watery would you know why that might be?

Allow to settle or get cold and it will be thick. Atimes it can be watery from the Beggining doesn’t mean it’s not ok. You get what I mean?

The reason you stir so much is because margarine has excess water than butter. Butter would be way better
