This is a lazy-man’s cioppino. I was born and raised in San Francisco. Grew up loving cioppino, but we always used cracked crab, not shelled, shrimp or prawns , not skinned with tails, scallops, clams in the shell along with the fish. Half of the enjoyment after putting all the stuff in a bowl, is putting on a bib and getting your hands “dirty” by deshelling each seafood morsel by hand and eating with your fingers. Once you start you don’t stop ‘til you’re done and only use a fork to get the fish and scallops out if the bottom of the bowl. Of coarse also dipping the sourdough in the sauce as you go. Ain’t nothin’ better.

Born and raised in San Francisco and this being my favorite dish ever oh and also being a cordon bleu chef I can tell you her recipe is disappointing. This is what is known as a “lazy man’s ciopino” which is fine because I am absolutely lazy but what I can say is her method is off her seasoning is off and on top of that she’s lacking about 1,000 ingredients and replaced them with vermouth and white wine. Traditionally vermouth and white wine are called for in the recipe but aren’t called to replace all of the other ingredients by volume. Lol I’m sure this recipe was just fine for someone who wasn’t raised in Gotham like myself but this being my favorite dish it’s easy to be critical when someone doesn’t come close to what is familiar in or around my city.

I’m from the Bay Area. Grew up eating Cioppino, and this is not how you cook it. Her vegetables are sliced too big. it’s supposed to be dice. The fish is supposed to be smaller. If you are already putting cooked crab, you out that at the end. Too much tomatoes sauce. It’s too acidic, you pay for it at the end. I watched another video of hers, trying to make Chicken Adobo! OMG! She needs to do her homework, before sharing her recipe. The women cannot cook! Who follow this woman?

How would you attack this? Should've kept the bread on the side, unless you're going to serve this with a fork and knife, in which case, better make sure it's a sharp knife cutting through that hard bread.

I'm with you. I don't like soggy bread I know other people like to sop up gravy and sauce with it. Not to be a party poop but I'd ask for the bread to be served on the side.

typical of Rachel Ray...She cuts corners. Her version is a very lazy way to make a Semi Cioppino. When In all reality, when making a true Cioppino you use "Cracked" Dungeness crab in the shell , NOT picked & shelled crab meat. The shells full of crab meat in the broth adds a ton of flavor, as do the shellfish in their shells. You also add clams, and not nearly as many Mussels as she did. (It's not Mussel stew). Also you should cut the Fish into 1" to 2" cubes so it mixes in the broth and cooks easier, while not breaking down. The Sour dough Bread is a side show, it's Not a main part of the dish. You always use sea scallops. She included way too much in the way of Fennel and Leeks, and did not use any Shallots or Saffron, which are crucial, as are San Marzano Crushed tomatoes. Cioppino is not meant to be a elegant meal, but a hands on outstanding dinner. Put on a bib, get the crab cracker and pick and go to work. Using the Bread as a mop to get all the goodness. I've made Cioppino for over 40 years...her recipe is NOT it.
