Easy to follow and learn even by this non-Spanish speaker. The segment following 5:05 made me wish for some English text in support, otherwise a very pleasant and informative video. But even there, I got her message that certain pairs of chiles work well together. Her knowledge, integrity and love are always evident. Much respect.

I am married to a Mexicano and this recipe is a lifesaver! Guajillo salsa is his favorite! Please keep posting more easy Mexican foods! Do you have some easy seafood recipes to share? And it doesn't matter to me it's in Spanish. But the tips in English are very much appreciated!

I have been making sauces for years with dried and fresh peppers. I find a recipe and then 'make it my own' by doing what works for me. adding what I like or not adding an item if i do not like it. There are no rules. :) that is my conclusion after years of looking for recipes.
Just made the Chile de arbol salsa for our Fathers Day taco themed dinner (my dad is a heat addict!) Too spicy for me but he'll love it! Thank you!

Very common misconception. Seeds in chilli's have zero heat. It's the placenta that holds them that has the heat. When chilli's mature, especially hot varieties they excrete oils. In the really hot varieties you can see it as a clear to orange oil inside the pepper. This can get on the seeds and everything inside around the placenta. Thus making it hot 🔥. The seeds themselves never contain any capsaicin however.

Hello! I don’t speak Spanish unfortunately, so I may have missed it in your explanations. But what are your opinions of mixing the dried chiles for flavoring? Example: red sauce for enchiladas. Is it a good idea to mix lets say dried NM hatch chiles and arbol to increase the spicyness or mix in guallio chiles for a unique flavor profile? I look forward to hearing from you, and thank you in advance:)

HI! Yes, we would definitely encourage you to mix chiles for a unique and delicious flavor. Be careful with chile of Arbol, our recommendation is to just add one because of how spicy it can be. 😊👍

Our suggestion is to use Guajillo for a mild spice and Arbol for more heat. Just getting in to dried Chilies and can’t wait to try these recipes out. Is there a reason some chilies are fried vs boiled to reconstitute them or wake them up? Like why fry the arbols vs boiling them? Or why boil the chipotle’s vs frying them?
