I have every desire to make my own salami and ham, and no reason to, because a) only two of us, and b) would struggle to get the conditions correct, but I absolutely love salami and ham. Beautiful!

My family used to make something from a pig's head. It was called (phonetically) 'sowce' meat. Similar to the word that this recipe is called. It was a lot of little tidbits cooked with spices and then jellied in the cooking liquid.
