I would love a maple Apple version! More of a breakfast sausage with sage and black pepper and the normal players for breakfast sausage. I have the seasoning mix for Jimmy Dean breakfast sausage the recipe anyway. I think about half of that would work with Maple and apple but I'm not sure how much maple and Apple to use.

Chickpeas & Chickpea flour! I ride out with chickpeas, you can play with a combination of other flours and beans like rice flour and lentils, but chickpeas are my go to for gf mock meats.

Season your life away... lol. I can not take the flavor of it either... You have to mask it with plenty of spices, herbs, flavorings... it’s the only way. My seasoning cabinet is a beast!

+Dorothy Parker Yes rice paper would certainly work. They have vegan "veggie" casings sold online, it's made out of mystery veg... lol. I only say that be cuz I have no idea what they use. I would've used the rice paper for this recipe but I hadnt discovered its versatility yet. This was my first mock meat recipe.

What can I substitute for mushrooms or can I just leave it out? Mushrooms are micro toxins.

+S. Jones. Roasted Eggplant would be a great substitute Mushrooms aren't micro toxins but they produce mycotoxin. Which can be found in beans, cereals, cocoa, coffee, corn, figs, flours, nuts, olives, peas, rice, and soy. In large amounts mycotoxin is harmful to liver and can cause renal disease. From my understanding only poisonous mushrooms produce mycotoxin in such an amount it can be harmful to humans. @@KorennRachelle Paul Stamets is the guru of gourmet mushrooms and does electron microscope research on eatable fungi, even common button mushrooms, contain traces of carcinogenic compounds in raw form. The same toxin, hydrazine, is also found in portobello/cremini mushrooms, and shiitake mushrooms contain a naturally occurring fomaldehyde.Oct 28, 2013, says Google, I read his book twice, but didn't see this shiitake comment in there, which is anti-carcinoma 180 by the way, I wouldn't touch the portabello/cremini, but if you had to use white button, boil the heck out of'em for about 45 minutes is what he says, dumping the water of course, the only other thing I remember is Wood ear mushrooms thin the blood--
