New subscriber here. I was looking for a recipe for fruit sandwiches, and you had the best video & recipe. Now, I wish I could find the Yukihira pot you use in Canada, but it's going to take some hunting. It's lovely and seems perfect for cooking and serving in. I also need to hunt for the fish cakes. Unfortunately, I live in a city that isn't culturally diverse and I just found 1 Asian market where I live that survived the pandemic. I found my favourite snack food: seaweed snacks, and bought every flavour they had. They didn't have fish cakes of any kind, so it looks like a trip to Toronto is in my future. I can't wait to binge watch your videos now. I'm sure I'll learn a lot. My Son has promised to take me to Japan as it was one of my Father's favourite places to visit, plus it's been my dream for over 40 years!

This was so delicious. I used the dashi pack that I purchased in Tsukiji market before the pandemic. I took the left over to my work for lunch. I saved the noodle and soup separately so that the noodle did not get soggy. Thank you for the recipe Nami-san!

@@justonecookbook I have made an eaten a few different ways of somen noodles but I am looking forward to trying your recipe also. It's always good to try many versions of the same traditional dishes. By using different ingredients you are challenging your pallet not get used to one particular flavor profile.

I love vegetables and tofu (fried tofu pouch, or fried thick tofu - both found in Japanese market). And use kombu dashi for the broth. :)

Well, just 5 kinds (www.justonecookbook.com/how-to-make-dashi-jiru/). But outside of Japan, mostly known for 2 types (bonito & Kombu Dashi, or Kombu Dashi that’s vegan). I explained more on my blog post of this recipe.
