I have made this 3 times. It is delicious. I had trouble at first but finally the 3rd is perfect. The warm rising space is important. Thank you for sharing.

I’ve been wondering what to do with the discard and one of my best recipes with commercial yeast is cinnamon rolls. Thank you for this!!!

Can I use active sourdough? Do I keep the same proportions? Would it give me an even better result?

Are these makeable with a non-dairy milk and vegan butter? They look soooooo good!!!

Hi India, Just to share my experience. Yes. You can use another milk. For my cinnamon rolls I used Almond milk and they were good.

Can you use einkorn starter and flour with this? Thanks
@TheRegularChef4 жыл бұрын
You could definitely use an einkorn-based starter, but I would recommend sticking to bread flour or all-purpose flour for the actual rolls because you need the gluten development that those types of flour can provide.

how many cinnamon rolls made from this recipe? can use old discard?
@TheRegularChef4 жыл бұрын
I made 8 rolls in this video, but you could make them larger or smaller if you like. You could use discard up to about 1-3 days old, but for the best results, you should use fresh discard.

Just one remark way too much sugar i needed to unfold the dough remove excess wouldn't properly fold and fall a part ...

Why do people always assume that people consider these recipes only worthy of "discard"? Better to say "purpose made levain". 🙂

First time viewer here. I don't have all the fancy kitchen trinkets. But thought I'd give it a go... But no measurement for the starter? Which has made me decide to stop watching and find a new video with regular instructions and regular kitchen items.
@TheRegularChef3 жыл бұрын
I'm assuming you're referring to the kitchen scale? That's certainly an essential item for sourdough baking, and you can get one for as little at $12 on amazon. I even linked to several options in my video description. It's impossible to give an accurate volumetric measurement for a sourdough starter because it depends on how much your starter has risen and how soon you're using your discard. For example, one person might use their discard after it's tripled in size, while another might use it after it's fallen back to its original height. So if they both used a volumetric measurement, the second person would be using three times as much starter as the first person, which would lead to extremely different results, making my recipe very inaccurate and much less foolproof than it currently is.
