My aunt visited me and showed me how to make this fudge that i've only ever had in South Africa. It had been 10 years and now that sweet sweet taste finally got to hit my lips again.

@@kiyoponnn Never heard of atte-ka-halwa or sooji-ka-halwa? Both grain-based. Perhaps you're thinking of the Greek-style "halva" which is seed-based.

This is a very old recipe - handed down family recipe of my great-grandmother. I’m sure (just as there are for a basic sponge cake) there are many different recipes out there for fudge (this one has flour). This is not Halva. It’s delicious.

Tracey Pelser fudge recipies NEVER call for flour hun. And there is such a thing as too much sugar you added a freaking gallon of sugar. That’s asking for type 2 Diabetes

Regarding the comments that this recipe is not authentic South African Fudge because it contains wheat flour. Those comments are incorrect. You cannot get more authentic than recipes from “Huisgenoot” magazine (edited by Annette Human). The book “Huisgenoot Wenresepte 2” (Wining recipes 2) (published 1984) has a recipe submitted by H.Gous (from Empangeni) that has 140g “koekmeelblom” (cake flour). That same recipe was reprinted in “Die Beste van Wenresepte” (The Best of Winning Recipes) While Cake Flour may be an unusual ingredient for “Authentic Traditional SA Fudge”, its use has certainly been well documented. (I have a PDF or .jpeg of the book/recipes available for upload if required)

The recipe and method is very similar to this KZbin video by Titoyo. This is the recipe from “Lets Cook Top 500 recipes” compiled by Carmen Niehaus (the original, Afrikaans, was in Winning Recipes 2 compiled by Annette Human) 160 g butter 75 ml (5T) golden syrup 1 can (397 g) condensed milk 325 ml hot milk 6 x 250 ml (6c) sugar 250 ml (1 c) cake flour 2 ml (1/4 t) cream of tartar 5 ml (1 t) vanilla essence Heat the butter and syrup in a heavy-based saucepan of low heat until melted. Add condensed milk and milk and mix. Combine the sugar and flour and add to the milk mixture, stirring well. Bring the mixture to the boil over low heat, stirring continuously. Add the cream of tartar as soon as the mixture comes to the boil and simmer for about 25 minutes over low heat until the mixture reaches the soft-ball stage. Stir continuously with a wooden spoon to prevent it from sticking to the bottom. Remove from the heat and stir in the vanilla essence. Beat the mixture with a wooden spoon until it begins to stiffen. Pour the fudge into a 28 x 18 x 3 cm greased dish, spreading it evenly. Cut into squares before it hardens completely. Makes 72 squares. These are my additions: 6 cups of sugar is about 1350 g. I used less about 1 Kg 250 ml cake flour is about 140 g. I used all-purpose flour I used full cream milk and did not warm it. Soft-ball stage is about 114 degrees C (113-117 c)

By the way, if you take that can of sweetened condensed milk and (unopened) boil it (covered in water) for three hours, you will get what we Norwegians call HaPå, a caramel spread to put on your bread. (Condensed milk isn't often the topic, so for once I could finally share my random knowledge of it)

We in south africa just call it caramel...we don't use it as spread though...we fill cakes and donuts and biscuits and stuff....easy way to make a caramel filling when all you have is some condensed milk...add some cocoa powder or melted chocolate and its delicious choc caramel

it is like a coarse type of chalky sugary crumble... Chocolate fudge tends to be more gooey in the middle, they are like the yin and yang of fudge... I don"t care for peanut fudge.
