I've been making black eyed peas 4 decades but I always like to browse and even learn something new. You make your exactly like I do minus the bay leaf. I didn't know however adding salt can split your peas. Thanks my dear for sharing. Making them right now 😅

Haven’t watched the video yet, but I tried doing a quick search the other day when I went to make it and didn’t notice anything. Have you ever done a video on collard greens? Matter of fact, I only heard recently of using mustard greens and stuff like that to make ‘greens’. You got any tips or family recipes/traditions in how you prepare them? I wound up doing a combination of different stuff I looked up. Majority of which i wanna say was garbage. I had a leftover smoked ham bone from Christmas. I basically used that and did some other stuff. What I did was: - 1 Used smoked ham bone - 2 cups beef bouillon/beef broth - half yellow onion, diced ~~ 1 Tbsp minced garlic (pre made in a jar from supermarket-kind) - some seasonings and spices - Tbsp-ish of Texas Pete I actually cooked some steak earlier yesterday night. I recently made clarified butter, so used that with some peanut oil to cook it. Used ‘Janes Krazy Salt’. Seems like mostly granulated onion, garlic, salt, pepper, rosemary, with maybe a couple other herbs. So I used my double sink to wash the collards - trimmed the stem and placed them into the sink (2 bunches - next time I’ll do 3-4. I wish I would have known they cook down that much). Cold water with some salt and white distilled vinegar. Let em soak for a bit thenrinsed them off. Pulled out the majority of the spine. I did it like pull out, rinse, pull out the spine, then set in the other sink. Once it was done: With the leftover grease from the steak, I cooked the onion. As it softened, added the garlic and cooked a couple more minutes (until fragrant?). Scooped that all into the Dutch oven. Then I added the beef broth and ham bone. Brought it to a boil. While it was coming to temp, I took a 5-7 leaves at a time and rolled them up and cut at roughly 3/4” ribbons. I cut maybe 25% of those bundles in half. Added them in as I went, stirring. Then I let simmer on low for a couple of hours. Maybe like 2-4 or so. After it was boiling and I tasted them, I added some Texas Pete and waited for it to cook in. It still doesn’t have the heat like putting red pepper flakes would, but it’s all there. My wife says it’s good for people that don’t like heat. Sorry for the jumbled wall of text - I was just thinking I went to see if you had any videos on it, didn’t notice any, and wanted to reach out. I had a lot of fun making them. My only thing is finding another smoked ham thing to throw in with it, because my FIL only makes it every so often. I like seeing all the ways everyone else makes it too
