If you're anywhere near Oklahoma, Shawnee Mills makes a great white corn meal mix. Add egg, oil, buttermilk and some sugar if you want. Add more oil or butter to a hot skillet and put in a hot oven. Use a big skillet because it's better if not too thick.

So glad to see a real and authentic cornbread recipe that doesn’t have sugar anywhere near it! I can’t stand sweet cornbread, though my aunt prefers it. I make her cornbread muffins with sugar and then I make a proper pone just like yours for the rest of the family!

I've been watching cornbread recipes today, and the way you fixed yours is the closest to the way I fix mine. You're the first so far whose heated the skillet before putting the cornbread in. I always do that. Makes great cornbread with the best edges.

Aunt jamima is another cornmeal mix that is very good as well. I make my corn bread like this for my dressing but for eating with greens, peas, beans etc. I will sneak in about a tbl spoon of sugar. You’re bread looks sooo yummy!I know your kitchen is lit after taking this from the oven!

The only buttermilk I could find here in the UK was a Polish brand that's so thick I had to use a cup of water and all of the buttermilk to get the right consistency. It's already been in the toaster oven now for 20 minutes and looks okay so far.

@@KitchenNotesfromNancy It's very pale from all the buttermilk. It's moist and spongy. I've crumbled it up into two freezer bags as there's so much. I'm going to try again with regular milk and a little greek yogurt instead, then try making dressing adding some of the first batch.

@@KitchenNotesfromNancy I made another batch of cornbread. I made the dressing with a bag of the buttermilk cornbread, the new batch and a box of StoveTop Turkey stuffing. It's quite nice. I forgot the eggs but I ended up with two trays so I can add an HB egg to the other one when I bake it tomorrow. I still have a bag of the buttermilk cornbread in the freezer. I'm going to be sick of dressing by March.

I used half the amount of buttermilk and replaced the other portion with mayonaise. Makes it really moist and fluffier. Try it sometime :)

We didn't put sugar in our corn bread except maybe just a tablespoon. Hot skillet with oil in the bottom and hot oven. If I see thick corn bread with a shiny top I know it's full of sugar.

Are you making just cornbread or using the cornbread to make something else? This should serve about 8-10 people depending on the size you cut. The ingredients are listed below I would multiply everything by 16-20. I hope that helps
