Learn how to make Spaghetti Bolognese an delicious Spaghetti recipe with The Bombay Chef Varun Inamdar.
Spaghetti Bolognese is an delicious comfort food! The mushroom Bolognese will sure tickle your taste buds. So let's make a classic spaghetti Bolognese recipe at home with the Bombay chef Varun Inamdar only on Rajshri Food.
Ingredients
For Spaghetti
100 grams- Raw spaghetti
1 ltr.- water for boiling
2 tbsp - salt
For Bolognese Sauce
1 tbsp- olive oil (extra virgin)
1 tbsp - garlic, chopped
2 tbsp - celery, chopped
1 large onion, chopped
3-4 large tomatoes, blanched, peeled and chopped( even de-seed them if you wish to)
Salt to taste
200 grams mushrooms, chopped
1 tbsp parsley, chopped
4-5 nos basil leaves
1 tbsp black pepper, crushed
Garnish
Few basil leaves
Method:
- In a pan of boiling water add salt and then add the Spaghetti & cook it for 8-9 minutes
- Take some water out and keep it aside & strain the rest & add some olive oil over the Spaghetti
- In a pan add olive oil, minced garlic, celery, minced onions, tomatoes, salt and mix it well
- Add mushrooms, parsley and fresh basil leaves, freshly crush pepper corns and water which was reserved initially
- Add the Spaghetti to the mushroom bolognese
And the Spaghetti Bolognese is ready to be served!

Hi, chef varun. The native pronunciation of bolognese is actually "bo-lo-nyeh-zeh". The last "e" in the word is actually pronounced, and al dente is pronounced "al DEN-teh" rather than "al-DAN-teh. In any case, this is an out-of-this-world recipe, the channel is marvellous, and you are our very own 3-michelin-star chef: an absolute culinary genius without doubt

Oiling the pasta keeps the sauce & masala away ... never oil your pasta , cook it lastly , drain & add to the sauce , no oiling , no cold water rinse ...

The meaty slop that for many of us was our first experience of "spag bol" is so far removed from the original that ordering spaghetti bolognese in Bologna will earn you nothing but blank stares from your waiter. Tagliatelle al ragu, as it's correctly known, is a pasta dish with a meat sauce, but that's where the resemblance ends. Bologna is the capital of the Emilia-Romagna region, in northern Italy. It's so well known for its food that it's referred to colloquially as La Grassa, which means "the fat one". Its pasta, in particular, is considered the finest in the country. It's the birthplace of tagliatelle, taglioni, tortellini, tortelli, lasagne and cappelletti - but not spaghetti, which is never used in Bologna's best-known dish. As for the ragu, the most important ingredient is time. The sauce, made always with mince beef (from a fattier cut such as chuck), onion, celery, carrots, tomatoes and white wine, and sometimes with pork or chicken livers, should be left to simmer, uncovered, for at least three or four hours. Longer is better. In the case of tagliatelle al ragu, the only appropriate garnish is freshly grated parmesan - another specialty of the region. The earliest documented version of tagliatelle al ragu is actually from Imola, a town just west of Bologna. But the role the city has played in popularising the dish legitimises its claim to its origins.

To cook pasta first and mix with oil and then do the sauce is a British/American thing, not Italian. I have lived in Italy all my life and have never seen that. You either cook the sauce first and then the pasta, or, you cook the sauce and pasta at the same time, as long as the sauce is ready when the pasta is.

We cook the sauce first or (if it is possible, as some sauces require time to be prepared) we cook pasta and sauce at the same time, but into separate pots. When pasta is ready, we immediately top it with the sauce. Or (better) we cook pasta and sauce together in the same pot for the last minute. Rule #1 in cooking pasta is "NEVER LEAVE PASTA UNSEASONED FOR MORE THAN FEW SECONDS" cause it cools down and sticks together (if you add oil to prevent sticking, then the sauce will not stick to pasta). @slopermarco I always cook the sauce and little while later , I cook the pasta , for the same reason you stated. I didn't know it was the' Italian way '. It just makes common sense to cook it in that order. Thanks for the tip about not adding oil to the pasta ! I didn't know that !

If you come in Italy and visit Bologna and you unwittingly say "spaghetti bolognese" people will think you are mad: the reason is doesn't exist "SPAGHETTI ALLA BOLOGNESE" because they do not cook spaghetti with ragù (ragù is the delicious tomato sauce with meat, etc. etc. called as "bolognese"). They cook other kind of pasta, NEVER spaghetti in this recipe.

Absolutely stunning... I have made using these tips with my slight modifications like using prawn along with mushroom cut into slices, using desi basil leaves, cherry tomato, and capcicum instead of salary... The recipe of Bombay chef Varun is so great that all of my modifications turn out to make it a so yumm better than restaurant Spaghetti bolognese.. Thanks Varun.. So awesome good tips, and must say this vdo is way better than many Michelin star cook recipe of spaghetti.. ❤️
