Now, that is a unique way to taste pumpkin! I always used it to make a soup or a pie, but never a pasta sauce. Recipe is already bookmarked and will be tried soon. The combination with sage is unbeatable. Love from Greece 🇬🇷

Love it - such a beautiful vibrant colour when using fresh, locally available, and simple ingredients cooked right! None for Whiskey though with nutmeg in there, but I think he was okay with his consolation prize, lol. PS - a sauce made with San Marzano or cherry tomato with butternut squash is also really tasty and a nice way to get more variety is your pasta!

A few tips here. Cut the squash in smal pieces for more surface to be caramelized inside the oven Infuse the oil with the sage and maybe use some fresh chilly but take them all out before adding the sauce, you can sprinkle them later For pasta use something with a fresh texture a bit of flower on them, maybe make your own tagliatelle or parpadelle.

A good idea to make something delicious from pumpkin. Attractively prepared. From me a LIKE. Unfortunately, I can't cook it because my wife doesn't like pumpkin. That's why I have "Kung Pao chicken" today, but I don't think that's the worst choice :)
