Evharisto. My mum uses rice to draw moisture so I do the same but will now try using semolina. Thanks for the tip.

Just like YiaYia's. Used to love making filo with her. Cooking out all the water is key. Your Spanokopita looks so crispy and delicious. Love the outdoor oven. Craving now.....off to the store to buy ingredients.
