Recipe:
St Lucian Cocoa Tea
Ingredients
¼ cup Cocoa Stick, grated on box grater
1 each Bay Leaf
1 each Cinnamon Stick, broken in half
2 each Star Anise
3 each Whole Cloves
2 cups Water
1 can (375g) Evaporated Milk
¼ cup Condensed Milk
Method
1. Grater cocoa stick on box grater and set aside.
2. Combine water with bay leaf, cinnamon stick, star anise and whole cloves and bring to a boil and simmer for five (5) minutes to infused the flavor of the spices.
3. Add cocoa powder and whisk to incorporate and simmer for five (5) minutes.
4. Add the evaporated milk and bring to a boil and simmer for five (5) minutes.
4. Add the condensed milk to sweeten to desired taste.
5. Strain into a mug and serve immediately.
