Before this cocoa reaches your table, it goes through a process of fermenting, drying, roasting, shelling of the skin, grinding, and shaping. What I present to you in this video is a product of this multi-step process. This cocoa comes from Grenada, W.I. and may be enjoyed sweetened or unsweetened.
Spices used: Bay leaf, clove, star anise, cinnamon, nutmeg, orange peel, and ginger. If you choose not to use all of these, bay leaf and cinnamon are most desired in this chocolate drink.
