- Preheat small oven and crisp up organic bacon on parchment paper. - Create a water bath with a baking dish and place it in the oven to cook the egg bites. - Blend pasture-raised eggs, cheese, cottage cheese, salt, and pepper for the egg mixture. - Fill a muffin tin with the mixture and top with chopped bacon. - Bake in the oven for 25 minutes until the egg bites are fluffy and set. - Homemade egg bites are cheaper and healthier compared to Starbucks. - Freeze any leftovers for future meal prepping!

I eat these Starbuck egg bites a couple times a week, buying them at Costco. Dahhh, finally looked for a hack to make them myself. Just ordered the muffin tin, and I can hardly wait to make them! I eat the egg whites and red pepper, but that’s mostly because the bacon ones are too salty. I’ll just use your recipe here and omit the bacon. Thank you! I’m a loyal follower of yours!

Thanks for this recipe! I first made these in an old aluminum muffin pan and they stuck! Ordered the ceramic lined muffin pan you recommended. Nothing sticks and the egg bites are bigger. Also found good culture double cream cottage cheese and it tastes like the yummy, creamy cottage cheese we ate in the 59s and 60s. WIN, WIN!!

Perfect timing!! 😃 I am planning to make egg muffins for my husband tomorrow! I'm going to give this recipe a try on one batch (I agree with your suggestions and always make a double batch and freeze them)! Instead of bacon, I will be using chopped up ham and adding veggies (green onion, diced mini peppers, chopped spinach, and mushrooms). I use a little bit of garlic powder as well. 😉

However, I have one burning question that no one on the internet is talking about, especially in conjunction with the “carnivore diet” and those people with autoimmune diseases. Lot of the high protein or carnivore community say, that carbohydrates or more specifically, bread 🍞, is bad for you. I have done my research, and ALL bread in grocery stores contain many preservatives, additives, and other ingredients besides flour, whether it’s whole wheat or not. So my burning question is…why isn’t anyone talking about or considering organic whole wheat unleavened bread made with only water or olive oil? Seriously! Just 2 ingredients. No one is talking about this. Could this be a game changer?
