My mom did something similar as an April Fools Day joke when I was a kid. She cooked meatloaf in the muffin pan & dyed mashed potatoes green to look like frosting to put on top. 😆😆

Years ago I thought I invented these. I'd never heard of them so maybe I'm just one of thousands of people who did invent them. :) I call them egg blobbies. If you stir in a little flour in before baking, the outer edge that touches the muffin cup has a more solid surface. Not a crust, but just a little firmer, smoother outside edge. (I think at the time I used one of the Bob's Red Mill gluten-free flours). And if you store these in the fridge in Tupperware, put wax paper between each layer of blobbies. Just cuz they sweat out water and that makes them easier to grab. I'm told they also freeze well, but they're so good I usually eat batches within days. I like to slice up cooked breakfast sausage links to put in my blobbies. It's okay to use canned or (kind of defrosted) frozen veggies instead of fresh. French cut green beans work pretty well. Spinach, too.

@Emily Thanks! At first I called them carboblobbies, which was very satisfying to say. But then I realized they're like 95% protein. Alas. Maybe protein blobies are for eating with... Carbies. Got to balance that out with a lot of protein to keep your blood sugar level. Who wants to invent Carbies? Oh wait, that's everything else. All the bread like items, including pancakes. By the way for most carby baked goods, if you get tired before you can finish baking all of them, water down the batter, cover and refrigerate. And then when you're ready, make pancakes. Pro tip from someone with chronic pain & fatigue: Lots of things can turn into pancakes. Go nuts. Experiment with converting each way between 🧁 and 🥞 consistency batter. Do the one that you have energy for. Also if you get tired before you can bake all your egg blobies, congrats, you have a scrambled omelet. You can even pour some in a mug and microwave it. But make sure not to do it for more than about 30 seconds and stir after each 30 seconds. Don't want your eggs to explode. And eat it out of the mug and just soak it in the sink until you feel it can get to washing it. Actually I don't think I've stirred anything into microwave mug eggs except for the dregs of the tortilla chips and a little salsa. Yum. If anyone tries it with all kinds of veggies and stuff, let me know how it goes.

Just to address it, I've salted my scrambled eggs, before I cooked them and they weren't tough at all after I cooked them. Whether you salt before or just after cooking them is in the matter of preference. I'd salt them before, just so that the salt is evenly spread out in the scrambled eggs.

But real talk, I think I'm going to get a muffin pan just to make these... Edit: Just made them today :) Pretty much, if you like omelettes, you'll like these. I decided to mimic the ingredients here, including steaming brocoli and roasting tomatoes (I cut some cherry tomatoes and baked them on the 350 temperature covered with a bit of olive oil and Italian seasoning). Added green bell peppers, green onions, and sliced turkey lunchmeat, mixed with three eggs and seasoned with a bit more Italian seasoning, salt and pepper (pepper pepper, lol). I just used pre-shredded cheese to top it, and greased my muffin cups (why does that sound almost lewd? 😂) with a bit of olive oil. Let them sit for about five minutes after they come out and I was able to slip them out of the cups with a fork (I don't have a silicone mold). With using three large eggs, I made four and a half egg bites. Admittedly, it would probably be quicker to just make an actual omlette but I do like the form factor of the cups and I'll definitely be making more of these! I live alone but these would probably be a great option for a full family.
