Our lolos and lolas called it TABRILLA, they were pioneer cacao farmers in our hometown, where i learned its in and outs as early as my kinder years. Pure heirloom from original trees were our source of white aromatic and tasty choco sips. Congrats to you sir in Davao for propagating this very promising trade

Hi James. Right now molds are readily available online. We got ours through Alibaba years ago and still using them today. No we do not sell tablea molders. Hope this helps. Good luck with your cacao journey

For Tablea, not necessarily. You can skip tempering. However there are some makers temper their tablea, usually those who have the machines already.

@@cacaocultureph oh i see.. i saw usually pag gumagamit ng melanger and polycarbonate nagtetemper sila. Pero kung kagaya sa inyo po na heavy duty grinder no need na ba mag temper? Paglabas sa chiller po matigas na po and d na madali magmelt kahit room temperature? Salamat po.

@@jascherinorlindzei2106 tempering po serves a different purpose. stabilization ng chocolate, mas maiwasan ang melt, shine and pagiwas ng bloom. mas standard requirement po sya sa pag gawa ng chocolates. Sa tablea po depends na po talaga sa maker (limitation sa experience, tools and equipment, etc) You can still make tablea with or without tempering

Hi Cacao Culture, good day! Naa lang ko pangutana, naa ba impact ang silicone molder sa pagmold sa tableya? naa koy gihimo though gibutang nako sa freezer for 20mins & after couple of hours murag marsh mallow. the rest na naka hulma pa for about 2days kay wala pa nigahi. ;( mao karon gina consider nako magpalit og polycarbonate.

We are actually surprised about your comment about how the chocolates are not holding form even after putting in the chiller using silicone molds. Top of mind we are thinking what kind of silicone molds are you using? It’s thickness may play a role in slower solidification of your chocolates. You should also check overall temp of the chiller? Are you using it for other things? Try first plastic molds also, cheaper than polycarbonate. We haven’t really encountered this type of situation before but we hope our advice helps😊 good luck on your chocolate journey 🍫🇵🇭

I think tama po kayo dahil sa klase ng ginamit na silicone mold, ito yon exact description sa binili ko "Cavity Ice Cube Tray Honeycomb Ice Cube Mold Food Grade Flexible Silicone Ice Molds for Whiskey Cocktail.." medyo makapal which I thought no impact on molding the tablea. The freezer that I was using those type for meat seller ;(. I think really need to change the molder & try using the chiller of the fridge instead. Hoping for more subscribers on your channel!

just grind with sugar (20-30% is okay). So sa pag pass po ng cacao nibs sa grinder 1st pass - mix in a few sugar sa tablea then pass through sa grinder again. wag biglain ang pag buhos ng sugar into the mix baka mahirapan ang grinder ninyo at mastuck.

Hi thank you for watching our videos. We purchased our molders 4 years ago through Alibaba online (imported). We actually forgot the supplier name pero these molds are polycarbonate molds. You can easily search naman for suppliers basta check lang yung mga online reviews if legit or reliable sila. Medyo mas mahal ang polycarbonate molds that you should consider it as an investment in your business. so make sure to pick nice pero simple design na classic para hindi madaling maout of style. We currently have around 50 molds na same design lang for production ng tablea namin. if small business pa lang ng tablea I think 10-15 pcs molds is okay pero again it depends sa operations mo. If budget is an issue baka you might want to check mga silicon molds then transition to polycarbonate molds once nakaipon na. we hope we were able to help you.
