Oily cheese could be the type of cheese and how well it holds up to heat, because oily usually is a sure sign of it being over cooked.

Where's the diced tomatoes sour cream, salsa yes to pico at the end🤔 this is probably more authentic Mexican style. I guess that could go on the side as a something to dip it in I've never tried refried beans with this that could be good kind of like a burrito style taco bake
