How to Make Tea Sandwiches

As a finale to our Playlist commemorating Queen Elizabeth's Platinum Jubilee we have the sandwiches that go with the cakes, pies and scones for a perfect afternoon tea.
Let your imaginations run when you are choosing your fillings. Just be sure that they are no more that 2 bites each and that they aren't sloppy as we don't want any stains on your prettiest frocks.

I am so glad I found your post Ellen, great tutorial. I am attending a Christmas Tea this week, and all the ladies are dividing the sandwich responsibilities. I made a delicious herb spread for CUCUMBER SANDWICHES. Leftover spread will make a yummy vegetable dip.

Hello I put diced pimento in the egg salad its my favorite .. my mom made this "ham" salad but no hame was in it she used hot dogs and bologna I use a meat grinder to do the meat and the other items that goes in. I love your ideas.

I was watching Kevin L Jacob's channel on tea sandwiches, he says the filling should be scant. These sandwiches seem way overfilled. Most others wrap theirs in saran wrap before cutting, and refrigerate them to "set" the filling and firm up the bread, making them easier to slice.

Organic butter at room temperature will spread easily. The olive oil changes the taste of the butter.

We have had Miracle Whip in the States for ever. It's called salad dressing on the jar. The light version is horrible.

Wouldn’t it make more sense to stack the bread and remove all the crusts before filling? That way you’re not forcing filling out when you cut!! Also, always chill the bread prior to usage. You want it hardened not soft so it will cut easier.

I think miracle whip is disgusting. You can add things to mayo to enhance flavor. But you can’t undo that ultra sweetness of miracle whip.
