ok so i just came back here to say that i followed your recipe eric for this turkey and honest to god, it is the best turkey i’ve ever had and changed my perspective on turkey for thanksgiving. i actually stopped eating thanksgiving turkey bc it was too dry and i was responsible for other dishes until i put my foot down and made all my friends and family eat turkey wings for thanksgiving instead of the whole turkey. i decided to take the plunge this year and try again with a whole turkey and followed your instructions and everyone absolutely loved the turkey and couldn’t stop raving about how juicy and flavorful it was (and we had no turkey leftovers!!!), so i want to thank you for this guide. i will never make turkey differently bc even i was amazed, although a bit skeptical as i don’t have a meat thermometer, but i pulled it out at the perfect time and i still dream about that turkey today. again, thank you for this amazing recipe!

I think the whole idea of choosing one part of the turkey as the control, seasoning/brining/marinating/basting it so many different ways and having a taste testing is a great idea for a Thanksgiving dinner.

This was the best NYT Thanksgiving Turkey video that I have watched in that past couple years. Turkey should be the main star as most people only have it once or twice a year. We do cover it's flavor up with a ton of side items because Turkey can be a very bland thing. So having a perfectly spiced bird that excites the palate is a celebration of the Turkey. thanks!

Sound like a great alternative to tradition. I always think sweet potatoes need spice, not sugar, so should work well here. For something green, perhaps something bitter and deeply flavored -- slow cooked broccoli rabe and garlic?.

I defrost the turkey in the refrigerator for two days and three days before Thanksgiving I prepare the turkey with the spices so that the turkey absorbs all the spices, I store it in the refrigerator and on Thanksgiving Day I put it in the oven.

I like to make a turkey galantine wherein your debone a whole turkey, stuff it with a well garnished forcemeat and reform it into a whole turkey shape again. At the table, just remove the wings and slice it like a meatloaf.

i don't think deep frying your turkey creates as good of a turkey as a dry brined one; the breast meat is still dry. I say if you're going to go to the trouble of heating up a ton of oil, just make fried chicken. I think it's better than the best cooked turkey for the ROI

Turkey's a good protein, its just that cooking it the picturesque 'classic' way is probably the most inefficient way to cook the entire bird. Whole animal cooking is a whole separate beast compared to cooking butchered cuts

I don't understand this. You worked to make crispy skin, then drowned the entire thing in gravy. And if that wasn't enough, you cover it with foil and put it in a low oven, essentially creating a steamer. Now your crispy skin is no longer crispy.

The only reason why thanksgiving is fertile for deconstruction on a platform like the NYT is because of its proximity to whiteness. They would never service Muslim, Hindu, or Sino-critical voices among people who are simply celebrating those traditions, even when controversies abound, because it is obviously offensive, weird, and antisocial, and I think you and everyone would agree with that. Why is thanksgiving different? And fyi… I know it’s silly to say this if it were solely about someone calling thanksgiving food bland. Watch last year’s thanksgiving video and it’s clear her distaste comes from wishing the holiday didn’t exist altogether, for all the mundane grievances of an underclassman reading Howard Zinn for the first time.

I find it very rude to judge a North American / European tradition and to say that it is bad, « actually taste good ». Our ancestors prepared turkey in this way and you dare to treat this traditional « bad » method! Lately, a couple of Quebecers on the show « dragon's den » dared to present a bubble tea, Boba, in an equally rude way, claiming to dare to make it better and were rebuted by Simu Liu, to which I agree. It’s ok to add a personal or cultural touch, with respect, not changing it with disrespect.
