One of the best steaks I ever had was a very cheap piece of skirt steak that had been pounded and marinated in jack daniels, then cooked over live coals. It's all in the method! I have been cooking steaks by the timer method for years, but I didn't realize I was using the wrong pan! I never could do a pan sauce and I couldn't figure out why! I always use my 12" cast iron, but I should switch to a 10"! I don't have a 10" cast iron fry pan, but I imagine a 10" dutch oven would work though it might be harder to manuever in. Awesome video. Awesome series. I'm 54 years old and have been cooking weeknight meals for my family for over 20 years and I've learned so MUCH from this channel.

I haven’t thought about taco salad since I was a kid and this was such a good reminder! Recipe was killer - I just added some red pepper flakes to the meat and finished salad with lime and a dollop of Greek yogurt.

Absolutely loved this video :) while you recommend cold prep for leftover steak, I think something that only slightly heats it does it well. I personally am a fan of scrambled eggs with steak. If there’s a particularly large fat cap I’ll usually already have it set aside to help grease the pan along with the butter or oil, then fry the eggs with my typical seasoning sorts. Once it’s just shy of a medium scramble (not completely soup, but the curds are kind of undecided on what form they want to make just yet) add in some cubed leftover steak, or sometimes I’ll cut it into fine slivers if I want to spread it further. Cook for like 30 seconds to a minute until the steak is just warmed through and the curds of the egg are hitting that medium mark, then pull from the heat. Medium rare steak still remains medium rare, but also still imparts all that steaky goodness to the eggs, especially if I had a fat cap to start it out with

Agree on the steak thing. Steaks with a lot of fat are better cooked to medium for fast cooking methods. If I'm doing it sous vide, med-rare is best IMO.

Steak reheat tip: use a microwave on lower power over longer (10min) to prevent it from drying out and mummifying; if you know you’re gonna have leftovers, buy thick slab steaks such that your reheated product retains excellent texture even after a little microwave sauna the next day

I like to add some caramelized onions right into my ground beef when I'm making burgers. Just like that first recipe, it helps keep them moist even while you get a good sear on them and cook it through. I don't like a pink burger.
