Realizing I neglected to show how I pour off the melted ice water (which contains the salt.) You can also run some cold water over the pickles and pour that off.

I have been experimenting with bread and butter pickles for the last few years as my grandmothers recipe was lost. I am definitely going to try yours this week and see how they turn out , the cukes are growing like crazy . great tutorial !

I don't add my veggies to the hot brine, they just get too soggy for my taste. I cool the brine to room temperature and add pickle crisp and my pickles are crispy like refrigerator pickles, with all the flavor.

I put plastic wrap on the top of the onions and cukes before dumping the ice...little easier to remove the ice.

I loved the way you explained everything, clear and precise. My son and daughter also help me can. This is the first time I have seen any of your videos. I also do alot of dehydrating and we even tried making hard apple cider. That was way too much work.

I have a question for a seasoned professional canner. When I’m going through a recipe is it safe to opt out on some of the seasoning ingredients or secondary ingredient? For example removing onion from a pickle recipe and then replace with more cucumbers or opting out allspice. Sometimes I do not have the ingredients or I don’t want that specific ingredient. My other question is, the vinegar ratio is what is important, right? To prevent bacteria or botulism really comes down to the acidity and sterilization? Last one how do I keep my rack from rusting?

Great questions! Changing recipes is tricky - they usually need to be pretty specific to keep the pH level accurate. So my suggestion to make bread and butter pickles without onions would be to search for a recipe that is designed for that purpose. The recipe may have more of something that offsets the loss of what onions offer. (If that makes sense.) And yes, the vinegar ratio matters a great deal to keep the acidity level at the proper level. My canner rack hasn’t rusted. Are you drying it before putting it away? I’d be sure to put it away dry. My Mom always kept a tea towel in the canner, so I do too!

I started a garden this yr for the first time. Last night I made my first jars of bread and butter pickles and I did it just like you said.. almost. I packed the pickles in the jar then poured the brine in. Problem was my cold pickles in the semi hot water caused one of the jars to bust. It’s was a mess but anyways.. next time I’ll be sure to put the pickles in the brine first. I plan on opening these up July 4th and try another recipe next. Ty for the hard work.. I’ll update on the 4th when I get to try them!

The only thing I don't agree with is the amount of sugar. I use 1 cup and I also add a stick of cinnamon ans a cup of apple cider vinegar. It's all about preference and this is just my 2 cents worth. Thanks and Keep on Picklin'...

You are a great teacher, I’m learning so much from you,I’ve been watching lots of canning video’s but they don’t go into detail like you. I have the canning guide you’re using.We’re empty nesters, can I cut this recipe in half? Also I’m wondering if it’s ok to mail canned items safely?

Thank you! I love to teach! Yes, you can cut the recipe in half and do a small batch. (I almost never do because my children eat a lot or I give them away as gifts.) But yes, you can halve the recipe. I tried to send some canned items to my brother in Afghanistan when he was there. I wrapped in A LOT of bubble wrap. The pickles made it, but the jar of peaches cracked and leaked. :( Luckily I had them in a large plastic bag, so it didn’t ruin everything else. Happy Canning!

Thanks! Once we open a jar, we switch to the solid white plastic lids to store in the refrigerator for regular use. It’s just easier than dealing with rings and lids that separate!

Great question! I wasn’t able to find an answer to this question in my early days either. I settled on this plan, and I’m happy with it.... I chill mine in a large stainless steel bowl with ice and salt, and when the ice melts, I swish the cucumbers around the bowl to “rinse off” the salt and the salt falls to the bottom. Then I ladle the cucumbers to the pot with the brine mix. I’m sure some of the salt transfers, but it doesn’t affect the flavor!

Thanks! If your jars are fully covered laying down, is it safe? My pot isn't deep enough for standing.

They should always be standing upright. The pressure on top of the jar is needed to create the seal. You can use smaller pint jars though.

My bread and butter pickles came out very salty. I thought I rinsed them well. If not, would that be the only reason they are salty? Can I salvage them, or do I need to toss them and start over

The big one I use to ice down the cucumbers is 17” across the top (narrows to 6” at the base) and it’s 7” tall. I have about 8 more in various sizes - lol! (Former restaurant manger…old habits die hard! 😂)

Yes! You can also use it to pickle other veggies or make pickle relish. Just reheat before canning.

Officially, the canning books will tell you 1 year. Our family has been known to find a jar hiding in the back of the shelf a couple of years later and ate them anyway! They don’t spoil, but they are less crunchy in time.

You do not “have” to rinse the salt off, but I do pour off most of the salty liquid (not sure if that made the edit.) You can also rinse if you choose, but even without rinsing, they never taste especially salty to me. If you look at about 1:35-1:40 in the video, you’ll see a zoom in of my instruction book. The lower section recommends using pickling lime and rinsing multiple times for a firmer pickle. Personal choice. We find most of the salt is in the liquid I pour away.
