Mexican Caldo de Res (Cosido)| Beef Soup
Ingredients
5 Liter of Water (20 cups of water or 1 1/2 Gallons)
4-6 Pounds of Beef Soup Bones- Hueso de Res
6 Pounds Beef Chuck Roast- Trozo De Diezmillo de Res
3 Tbs Salt ( Start with 2 Tbs and adjust to taste)
1 Whole Garlic
2-3 Green Onions
1 Anaheim Pepper
3-4 Potatoes
3-4 Carrots
3 Small zucchinis
2 Whole Corns
1-2 Chayotes
20-15 Green Beans
1/2 Cabbage
Optional
Lime or Lemon
Corn Tortilla
White rice
Chiltepin- Pepper Flakes
*Please adjust water measurement to your pot
*If you want a stronger flavored broth, cook your bones for 2 Hrs before adding Beef

Two things 1. My son is a butcher at a large grocery store in Chattanooga. He often goes out of his way to help customers. The customers have the option of leaving him with a thank you card with the manager. He really loves to receive them. 2. Collagen in bone broth is really great for your skin, hair, nails and help with arthritis.

@@gabybiz6089 the brown stuff that bubbles to the top in the beginning is called "scum".. kinda gross right? The collagen is boiled out of the bone itself and is infused into the soup. It's sooo good for you! If you've ever made like a roast chicken in the instant pot... or a gravy using the leftover broth...the collagen is what makes the liquid turn like jello once it's cooled. Collagen is actually used to make the gelatin used in jello for real.

This weekend I made this recipe. I was skeptical, I mean, beef soup, not a lot you can do with it, right? WRONG! This recipe was amazing and unique. The depth of flavor was so delicious and intense! We were eating and my husband said, we have to take some to my mom! So we threw some in a Tupperware and took it to my mother in law, an old Polish lady, who loved it! The next recipe I’m going to try is the chicken enchiladas suiza’s. If you haven’t written a cookbook, you really should, your recipes are fantastic!

When I was first married my sister invited my husband and I over for dinner. She made this for dinner. My husband had never had it before and didn't know that you get one big piece of meat per bowl. He raved about how it was the best soup he ever had and went back for seconds. When my sister went to put the leftovers away she saw he had eaten almost all of the meat. She yelled at him and he's never done that again but when I make it I make sure to add extra stew meat for him. He could probably eat an entire roast made this way. Thanks for the recipe. I'll be adding some of your suggestions to my own. It's almost cocido weather!

Saw this soup served to a gentleman in a small hole-in-the-wall Mexican taqueria in the High Desert of California. I was so intrigued, I asked what it was and took a mental photograph of everything in the bowl and what they served with it. Ended up making it at home and having three teenage sons and a husband eating it, it would become one of those great pot meals that everyone that asks, “What’s for dinner?” and the answer is this soup buys me instant “Mom of the Year” awards. Worth every minute of making it.

I'm making this for my family today but with a keto twist to make it comfortable for my home! I've subbed turnips for the potatoes and left out the corn and carrots but added more chayote and squash. Well, I made the caldo and it was delicious! One of my daughters does not eat meat, so used some grilled tofu in her portions. She will eat the beef broth and all, she just doesn't care to eat the flesh of other animals. i respect her decision, and that means more meat for the rest of us. Thank you again for sharing, it brings me back to the days of my childhood with my mom's kitchen filled with good smells!

This brings back memories when My uncle use to come and visit. Mind you we never knew when he would arrive at least twice a year. He lived downtown L. A. and come on the bus. He use to eat the marrow. And while my M❤M would take the bus to get groceries from the Grand Central Market in L.A. he would cut the nopale sand make frijoles and they Were done by the time she. came home. He and my grandfather fought with Pancho Villa from what he said and were running away from the Carranza's men and that is how they settled here...M❤M of 5

I’m going to try it if I can get the bones…my son used to love marrow bones which I would salt, pepper with flour and fry in bacon grease! Keep being being such a beautiful person, inside and out!!

Fun fact to remove the bitter taste in Calabaza and even cucumbers slices edges off and take the cut ends against the new edges and rub both in a circular motion 20- 30 circles on each side it should kind of create an espuma/Foam this is drawing out the bitterness. It works wonders!

Caldo de res is my very favorite soup my mom R.I.P. always made it for me for my birthday in August. Hot as hell but the more delicious. She accompanied it with salsa molcajete. OMG-Thank you soooo much for this great video. I have attempted a few times to try and make a “good” Caldo de Res for my spouse. And side note, my previous attempts have been unsuccessful. Today, I made it just as you did in this video and the response was wonderful! Immediately I heard from across the room....”Ooohhhh, babe this is good”......I can’t thank you enough for this video, I have finally found the perfect way to make my wife’s all time favorite dish. I also just ordered a tortilla press so as soon as that comes in, I plan on trying to make your corn or flour tortilla video. Again, thank you for the wonderful and detailed videos. They are a huge help for someone who was never really taught to cook. :)

My wife and I LOVE this soup. We are both mostly Irish (we did the DNA test) and we love this. We always order it at our favorite little Mom and Pop restaurant. I have never made this before. I will deff be making this. Thank you for sharing. ~Peace

We live in San Antonio, TX - and as you know it’s always hot here in south Texas! Lol! You are truly amazing!!!! I'm not Mexican and my hubby is and wheni showed him a part of this video I could see his mouth watering! Definitely going to try but I dont have any relationship to the butcher at Northgate...gonna have to try! Lol p.s. never heard of chayote until I met my husband. He said it reminds him of his grandma so I always add it to soups. Felt good watching it and knowing what it was lol thank you for this recipe!!!!!!

I saw this soup on Fb so I got on here & started looking up different recipes. This looks just like my moms yellow salt beef soup (she's Jamaican). The Jamaican recipe uses a fruit/veg called Chocho which seems to be the same thing as Chayote, I googled it. Mexicans and Jamaicans have similar cooking techniques from what I've noticed on your channel. I'm tempted to try Birria Consome and the chiles stuffed with queso in the tomato sauce. I love Mexican food. lol

Yum Steph this is the most delicious caldo during the winter this was my fathers favorite meal he loved it boiling hot and he'd be able to handle eating it super hot he said it made his heart warm so yea you got me down memory lane remembering my daddyo may he continue to RIP ❤🤩😍😘

Great recipe! Just a note: the floating material is not "impurities" and it is not unsafe. It is "denatured protein, mostly comprising the same proteins that make up egg whites. It is harmless and flavorless, but visually unappealing. Eventually, the foam will break up into microscopic particles and disperse into your stock, leaving it grayish and cloudy." It is in no way toxic. Skim if you want! This is a great video and can't wait to make it (minus the zucchini). Thanks!

Its 11p... I'm watching and WANTING this so so bad but I have zero ingredients and its 11p. I'm hungry and all I have on hand is what I made yesterday - Shrimp Spring Rolls to get me through this cold night - better than trying to sleep with an empty stomach.
