Instant pot cook time: 30 minutes
Birria ingredients
1 Liter of water (4 cups)
2 to 3 Pounds of Diezmillo / Chuck beef
1/2 white or yellow onion
4 Garlic cloves
4 bay leaves
4 carrots
4 to 6 guajillo chiles
1 1/2 Tablespoon chicken bouillon
1/4 tsp salt
*if you want a red red broth- add extra guajillo chiles
The recipe begins @10:18
Oil Temp: 290 degrees to 310 degrees
Birria chili oil ingredients
1 cup Canola oil or oil of choice
4 Guajillo chiles or 3 Tbs guajillo chili powder
2 medium bay leaves
1/2 Tbs Mexican oregano (1 Tbs if you love it!)
2 Tbs chicken bouillon
2 tsp black pepper
1/4 ground clove
2 tsp garlic powder
1/4 tsp sugar
For a spicy oil add suggested amount below
10 spicy chiles of choice such as chiltepin, pequin, puya, or Cheyanne

I’ve been following her for a while now. I made this for Christmas 🎄 this year. Well, last year now. We ate this over four days because we couldn’t get enough. We also made the Birria Chili 🌶 Oil as well. We also added the carrots and the diced cabbage...my gawd! So good. I made so much, that I packaged it up and froze it separately to enjoy each month x 5. I have had the pleasure of having Mexican friends that feed me food and love Mexican cuisine and cooking. I also found that we (our two cultures) have lots of food choices in common. Mexican food, the people, and the culture just feels like “home.” Last mention, I typically stop at all the Mexican Food Trucks where I live and all are great. I just noticed there is one less than 1/2 a mile away from me. You know I will be checking them out for a fix in between.

Ok so I went to an all black school in an all black neighborhood when I was in elementary and middle. In Decatur Ga. I have to say I dream about the food the lunch ladies made. I remember the okra and callard greens the most. I didnt know what it was even years later. But I Loved it so much. And im 32 now and still reminisce about the best food I ever had at any school before or since. ... Anyway now that I'm a stay at home mom I would appreciate any recipes to bring back a little memory of my childhood 🥰🙏💕

I’m originally from Arizona, transplanted in Alabama and there are no really authentic Mexican restaurants here. All my high school girlfriends were Mexican, so I grew up watching their Mamas cooking tortillas, beans, rice, tamales, etc. Your recipes remind me of home, so thank you for sharing them all here!!! I'm mexican American, 1st generation, grew up poor and got myself into Cooking school. I worked in awsome fine dining restaurants all over the Bay Area, CA and I always make sure to use a spatula to get everything out and scrape everything. Saves money, food, time because you have to make sauces and things less because you're not throwing it all out. I remember we hired a guy that opened a giant can og ketchup and shook it out, literally leaving like 8+oz in the can.🙅🏻‍♀️🤦🏻‍♀️ I swear I almost fired him on the spot.😅

TIP: If you need to dry out your chilies because they're too moist from the bag to grind into a powder, put them in your oven at 250F for about 15-20 minutes. Take them out, let them cool for five minutes and if they snap easily they are ready to be put into the spice grinder! Also thank you for the chili oil recipe! I probably make every two weeks now in the house, I put it on all sorts of things! And the best part is when I make it with just the guajillo chilies its not spicy just flavorful, so my grandmother (who is spice sensitive) can enjoy it too! Also, Steph, I have a question. Half the time when I go to buy my chilies from my local bodega, within a week or so of having the chilies in the bag I see little bugs in the bag. Like small moths. And I once even saw one in the bag at the bodega! Is this a thing? Or is it just an issue with my local bodega?

I’ve never had that moth issue and we’ve been buying Chile guajillo since I was a kid in my household. I have no idea why that’s happening to you. We do store the Chile after we open it in a ziplock bag or now that I’m an functioning adult with my own place I store mine in the air tight pantry containers (very Pinterest) hope that helps girl

@@loveskyfirefly Thanks for the tips! I know at the bottom of the bag there are two holes to let the chilies breathe. I suspect a moth or two must get in, get comfy and make themselves at home. It might be from my local bodega. I'll just start opening the bags immediately, giving the chilies a light wash, and then put them in a ziploc! Hopefully that'll do it.

Im making a pot today in my slow cooker. I love this Barria for a great freezer meal. After I eat my fill the first day I take some out for the next day and put the remainder into freezer bags for an additional 3-4 meals normally. Its just me so it helps out alot. Stephanie all I can say is this was to die for! I've made your red enchiladas, birria enchiladas, carnitas and mangonadas and they do not disappoint. I am obsessed with authentic Mexican cuisine! My family is from Michoacán, and my aunt is known for her chili oil and a type of quesadilla called chabindecas which pairs sooo perfect. I love chili oil. Most Chinese restaurants also have it only there’s contain a bit of ginger I love eating my white rice with it and honestly everything.

I made your birria last week on the stovetop it turned out so good it was incredible my family all loved it. I made this recipe today and let me tell you, it was over the top amazing! I didnt change a thing, I just made it as is. Sooo flavorful and delicious! My kids loved the tacos and consome. I must have missed this video just after I attempted it, I learned abt birria only in early August myself! Thanks so much for the patient breakdown and I can’t wait to add the chili oil into my arsenal, I always look for ways up the cooking game! Update: Just read your bio! I started dabbling in some Korean cuisines too! Kim chi fried rice, tuna and kim chi pancakes are dishes I can make anytime, I stock the ingredients, and I’m starting to add jjajangbap to that arsenal also! None of the restaurants around here do the beef or chicken birria so we incorporated them onto our food truck. We only do lunch services for local business and they were a success. Last service we couldn’t hardly keep up with the demand. Thank you!

So I made this Birria recipe with the chile oil. I haven't went & tried it yet from any local spots we have a lot I'm from New Mexico. So was not sure what it was supposed to taste like. But my step son & his girl loved it & my man too & he is so picky. My stepson & his GF went & ate at a top rated local spot & was disappointed they loved this recipe I made. Thank you!!!!

Okay… I made this tonight for dinner. WOW! My Instant Pot is really big so when I poured 4 cups of water in, it didn’t look like enough, that was a mistake but the flavor was still amazing!! But girlllllll… that chili oil is AMAZING!!!! My husband thinks I am basically a chef 😂😂 thanks for all of your recipes🥰🥰🥰 I feel like we’re friends😂😂

Those chili oils are amazing. I make them often. My family loves them. I made dinner for my sister-in-law and brought some of the chili oil out, She ended up keeping it for herself. 🙂

I’ve used your birria chili oil for nachos, in my sour cream, when cooking/frying ground beef and drizzled over nacho cheese! Although I did make it comfortable for my home and omitted the cloves. I also let the oil cool a little bit so I don’t burn the blended spices and I removed the Chile seeds (except when I used the arbol chilies for the spicy oil)! All I can say is BOMB 💣...FIRE 🔥🔥! Thanks for this video...it was extremely helpful for the chili oil! I am a foody and couldn’t stop tasting it!

Yes that is what I usually do let the oil cool of a minute. The first time I made it my spices burned a little but I was still good 👍

Hi Steph and Cloud. You know I’ve made the Birria before and adored it. (And devoured it with fervor). But I was always worried about making the Birria chili 🌶 oil because I am Irish ☘️ American and whimpy when it comes to spicy things. I decided today to make your crockpot Birria. Next time I’ll try the InstaPot recipe. I got brave and made the chili oil and it smelled sooooo good, I took a tortilla and dipped it into the oil to check the spice level after it cooled off a bit. Let’s just say, with chili oil dripping down my hand and all over my boca grande, I went back for a second tortilla! Oh my Lord, it’s freiking delicious, and not too spicy at all with the Guajillo 🌶 chilies. I cannot wait for the Birria to be done. (Three more hours to go…sigh). I am so grateful I found your channel- you and Cloud feel like good friends I go to, to cheer myself up and make delicious, healthy home cooked food. That is awesome! I have an instapot and only used it once. I was raised with my grandma and only cooked on a stove no crock pot or pressure cooker so this helps!

The Birria oil is 🔥 I made this and added it to some ranch and a little Tapatio and popped some boneless chicken tenders in the air fryer??? BOMB that’s all I can say 🥰🔥♥️

I moved from Tucson to Tenn and what a change in stuff I can find for sure. I am so use to finding whatever I wanted everywhere. I have gotten creative in gathering and flavoring for sure. I have done this even with deer meat and for my house it's a show stopper for sure.

Omgggggg, so my wife and I were at my brothers house yesterday… and my sister in law was watching your videos (the carnitas one) and my wife was like we have had an instant pot for over a year and never used it. Today we decided to use it and made This Birria recipe. Let me just say that I’m amazed,astonished and just so overwhelmingly flabbergasted on how delicious this Birria came out. I give it a 20/10! I’ve never had such amazing birria and made all in an hour! Thank you for your videos and keep them coming, I can’t wait to to the carnitas…
