Mexican Conchas Recipe • The BEST Conchas Mexic...
Ingredients
1/2 Gallon Milk
3/4 cup AP Flour
3 Tablespoons Cocoa Powder
1 Mexican Cinnamon Stick
6-8 Cloves or 1/4 Teaspoon ground clove
1 Piloncillo
1 1/2 Tablespoon Sugar
1 Cup Water
For an extra thick Champurrado use 1 Cup AP Flour

I love your videos. They bring a tear to my eye. I grew up near East L.A. and you remind me of my dear friends and families. I "adopted" an abuelita next door who fed me beans and tortillas in the morning (when I dropped in as a five-year-old) and taught me to make tamales. It was a wonderful part of my childhood. When she died in her nineties the family asked me if I wanted something of hers. I took her very old and well-used molcajete and keep it on my kitchen counter.

I've never heard of champurrado and I'll be honest, i had to google piloncillo and i feel ashamed i have never really looked into mexican/latino recipes, but i would appreciate if you would let your mom know how grateful i am that she has 2 beautiful daughters that have graciously shared their love and knowledge of the recipes of their heritage. There are so many variations on this. There are varying thicknest, I like it like a Hot, spiced, thick hot chocolate, no thicker than pepto bismol. And as you leave the masa or flour? sitting in it, it gets Thicker. I have had it where it was almost like "thin" cream of weat" and they gave me a spoon with my cup. Sometimes used a breakfast to at work in the morning. I Don't want my champurdo that thick. (still tasty though, just the "wrong" thickness for me.) There are Varying spices and amounts of spices/blends of spices used, (some can get too strong and throw things off. Like too much star anise, or to much Clove.) Clove is So strong, I'm thinking of using only one "stem" and only in boiling "water" for 5 to 15 minutes and then removing. I used 1 "stem" in 5 quarts of hot drink, And You could totally tell it was in there. Not too strong but you didn't miss it either, it was good, but I also had left it in simmering for an hour and a half,(longer?) and never removed it and that one clove gave 5 quarts of drink Plenty of good flavor. Clove is so strong and "liquorice flovored" star anise is strong too, I think they could quickly take over, I think that was a problem with one batch of champurrdo that I had?) You can Often/Usually get the Pilloncillo, the "masa flour" Our I guess "unusally the wheat flour" in the recipe, And the Mexican chocolate discs "usually used" in champurado at a dollor store/99 cent store and often even some mexican cinamon sticks, (tasty!) if you do not have a "mexican market" by you. I have not been able to get down to the border the last to seasons to get my champurrado while walking around the cold, high desert. I will be making my first batch here soon. I will be taking ideas from several "internet recipies" and my own ideas. I just hope I don't make it too thick. Too, Bland, or to out of ballance with the strong seasonings, (like the Clove, or maybe the star anise could get too strong and "off balance" fast, or maybe No star anise. :-)) I recomend you give it a try. Come up with a good batch and you, your family and friends should love it. Well at least if they sometimes enjoy hot chocolate. Good Luck. And if you try buying a cup while you are out. remember, there are all kinds of versions out there, some you will love, some might disapoint you, (especially if it is not like the one that you "love") Try it from a few different places.

I imagine you've probably been asked this before... But... Cook books? To have all these recipes be put on record to never be lost would be so wonderful. So many of these recipes I've seen being made from scratch is very valuable. Let alone a recipe like this being passed on from your great grandmother. I have very little recipes like that myself. Thank you so much for ALL the recipes you teach us. My mom didn’t have the patience to teach me much in the kitchen because I was always afraid of fire (gas stove). I would whine alot so it was my fault. My sister was more aventada and she learned 😂. I live out of state quite far from my mom, sis & family. Been married 3 years now and you have saved me. Thank you for bringing back the memory of my grandmother making champurado. I tried finding the recipe but only found the one with corn masa. Even my mom did not know my grandma used flour and toasted it. I knew because I spent countless hours with her in her kitchen and saw her cook. I love watching you cook and I am a 72 year old born and raised in San Antonio, Texas and you have shown me how to cook foods I grew up eating. Covid -19 has made me self quarantine and I found you by serendipity. I love how you interact with your children and I share your love for KDramas and countless other things.

Original champurrado uses nixtamalized masa or corn flour instead. In the north of the country we brown the corn flour the same way. There are other regions where pinole is used as well. 😊

My kids are half Puerto Rican and half Mexican and for the longest they’ve been asking me to make champurrado like their (Mexican) grandma (RIP) but we kept searching and couldn’t find anything similar. Can I make a suggestion.......can you try changing out the light above the stove from a yellow bulb to a white bulb. It's hard to tell the true colors of the food your cooking because the yellow light distorts it. I'm a novice chef and I need to be able to see things in their true colors to be able to judge what I'm cooking. Most of the restaurants I have worked in had fluorescent lighting so it allows everything good white light to properly see. Just a suggestion, not a big deal if you can't, but I just wanted to throw that out there.

1) If you're relying on light bulbs to help with your cooking, your problem isn't with the lighting. 2) This is a home kitchen, not a professional one, and the yellow bulb is standard to home kitchens, as it probably is in yours. 3) Even if you really are a "novice chef," you're probably making this at home, not in a professional kitchen run by an actual chef with his own menu, so the whole flourescent lighting thing is irrelevant. 4) The lighting in the rest of her kitchen, and in all home kitchens, isn't the same as in a profession kitchen either. How do any of us manage to do anything but boil water? 5) But, if the bulb above your own stove isn't the same as in the video, and if it's really that important to you, how about you change it to match the one in video? Why expect someone else to exert more effort than you are just to make your life easier?

Yellow lighting in home settings is ok for cooking because our eyes can easily adjust but when your watching a video with yellow lighting it throws it off. It was a harmless suggestion. Geezus people get so butt hurt over the stupidest sh**. Are you really trying to come after me over a light bulb?! Lol

Those small mesh strainers are so helpful in the kitchen. I have four different sizes one for any job. I think they are underated. Like you I make a lot of homemade food and they really are one of my favorite tools in the kitchen.

Filipino champarado is delicious. My husband's mom made it for breakfast. It's like A smooth, lightly sweet creamy rice porridge with chocolate.

My children and I cooked champurrado for the very first time. We was watching your video over and over and over. It's done and I put the cups to cool off. I wish to thank you for putting up this video with the flour as the ingredient and not the maseca. My dad tried teaching me how to make it. But era muy burra and I guess I am a visual learner. I can't ask him for the receta anymore as he no longer with me. So I turned to KZbin for some solutions on cooking. I just found your video yesterday. So again thank you for putting this video up. It's 2020 while the world is going through this crazy Pandemic. I know I will learn to cook authentic Mexican dishes as long as I follow a video recipe. This look greats. My grandfather's family is from Mexico city. As kids we grew up drinking Atole, and Champurrado. But we make it completely different. The Atole is more watery , a thinner chocolate, super good. I make Atole through out the cold months for my kiddos. But Champurrado, i save for days like Christmas Eve, and Christmas because I make it super rich. As kids my Abuelo always made it with cornmeal. I never cared for the cornmeal.So he started making it with grounded oatmeal. So yummy and so rich. We use cannela as our base. Our chocolate is very cinnamon base...super good...

Just an FYI- Cloves are dried, unopened flower buds, rather than sticks. This looks yummy. Thank you for the recipe and another informative video. If you mix just a bit of hot liquid into the cocoa, mix to melt, then add into the rest of the pot of hot milk. This will prevent lumps.

Sooooo you just saved me from having an argument with my 80 year old mother. I made champurrado tonight with maseca per usual when she had the audacity to say it wasn’t champurrado bc it wasn’t made with flour. Me very confused searching all over the internet’s y nada de champurrado con AP flour so this is gonna make her extremely happy when I show up next week with the real deal champurrado ❤️❤️❤️❤️❤️

This looks delicious 😋 It reminds me of a drink my great grandma made to settle upset tummy aches, I think it had nutmeg as well in it. She was the first generation to come to USA. She was a laborer at the Wright Farm in New Mexico. Unfortunately as she assimilated to citizenship she never shared the language or recipes. How time has changed, I would love to be able to speak and share recipes. You and Cloud give such appreciated history of the woman who gave life to this country. Prayers to you and your mom.

I made this and it came out so good!! I wanted to test it out, because I’m planning on making this for Christmas. My family loved it and it was so smooth. My brother said it was like a hot smoothie. Nothing like a little love to make something fun. I love this recipe. People forget the many uses that brown flour can do. It give's off a nutty flavor.

I made this on Saturday morning. I decided to use oatmeal instead of flour cause I try to keep away from it. I blended it after it boiled with all other ingredients. It was delicious. Thank you!

Thank you! My great aunt made this every Christmas till she couldn't. She passed away before she shared her recipe for champurrado and besos. Besos were meringue type cookies I still haven't found a recipe for.
