How To Make The Best CHICKEN IN CHIPOTLE SAUCE | POLLO AL CHIPOTLE

Today I’m going to be sharing with you how to make the best pollo en chipotle (chicken in chipotle sauce) it’s seriously one of my favorite dishes! I know I say that a lot but seriously this dish bring me so much childhood memories, it’s one of my ultimate favorite dishes that my mom used to make for us 😭

Ingredients:
4 lbs Chicken
4 roma tomatoes
1 can Chile chipotles in adobo sauce, add more if want more spicy
1/4 onion
2 garlic cloves
1 tsp tomato bouillon
1 tbsp chicken bouillon
1/2 tsp ground cumin
1/2 tsp Mexican oregano
Salt
Black pepper
Olive oil
2 bay leaves
2 large potatoes sliced into 1/2 inch
5-6 carrots sliced ( I use carrot chips)
1 serving of love 💕

I used this recipe and cooked the chicken till it easily shred off the bone. Then I put the shredded chicken back in the sauce and cooked it a little more until the sauce thickened a bit more. I also made enchiladas with it. The chipotle sauce was soo good, thank you for this excellent recipe!

Oh my goodness, this was delicious!! I made it last night for me & hubby. I had 4 chicken legs in the freezer. I thawed them out and made the sauce. I put half of the sauce in the freezer, marked and dated. I now have a red sauce for Camarones a la Diablo. I'll just add a little sugar to the sauce. I love the heat level, not too hot but just right. Fabulous flavor. I'll be making some more of your recipes. 🥰😁

Wow, this recipe rocks! I absolutely LOVE chipotle peppers in adobo sauce. It is such an outstanding flavor. I am definitely going to try your recipe. I also am going to check out your creamy chipotle chicken recipe as well. I do have one question for you regarding the timing when you add the Mexican Oregano. I’ve noticed that in other KZbin videos som presenters tend to put the Mexican oregano at the very end of the cooking process and not in the beginning. I’m curious, wouldn’t the flavor of the Mexican oregano kind of fade away if added near the start of the simmering process? Please advise. I really appreciate you videos and recipes. This looks similar to a dish I had years ago when I worked as a OTR driver. It was on Doremus ave. In Newark, NJ. A Mexican food truck would park right across from a jail/prison on that street and even though I hated that area, I LOVED that dish they served. However it was served with black beans, and i think maybe Yukon gold potatoes. If someone is familiar with this truck and dish please elaborate for me! Thanks
