Ingredients
1 16oz box macaroni pasta
2 carrots, shredded
2 large celery stalks, finely cubed and chopped
1 red bell pepper, cubed and chopped
1 green bell pepper, cubed and chopped
2 green onions, finely chopped
1 to 3 cups of mayonnaise
1 Tbsp of your favorite Mustard
1/2 cup heavy whipping cream (for extra creamy result)
1 tsp black pepper
1/2 Tsp of Smoked Paprika
1/2 Tbsp salt + 1/2 Tbsp to salt macaroni pasta water
1/4 cup white vinegar (Add after the heavy whipping cream)
1/4 tsp celery seed
*Celery and heavy whipping cream are optional, not a deal breaker for this recipe

Oh Mama! You girls make a macaroni salad like my sweet Mother did. My Mom added a package of Kraft deli American Cheese and diced it into tiny half inch squares...it really made it perfect. She put in diced dill pickle chips too. Not quite as much red and green peppers. Everything else was the same. Delish! Thanks for your beautiful program. Tip* You don't have to boil your macaroni pasta. Just salt your water as normal and put the pasta in and stick it in the fridge for about 2-2.5 hours. Pasta hydrates without cooking, plus it's already chilled. Drain the excess water then carry on. You can do this with any pasta. Enjoy!

Pasta is normally boiled by home cooks to speed the absorption process from dry to hydrated. I learned this from a greek 5 star restaurant owner who used 5 gallon buckets for all his different pastas. He would get the servings out as needed, and heated them up in a pan in boiling water while he was making the sauce. It went super fast. Faster than 9 minutes, would take him 3-4 minutes from start to plating the order. He served up around 120 pasta orders in his dinner service every day. All types, some chilled.
