My great grandma always fried her chicken wet batter it’s crispier. We’ve been doing ours for generation just salt, pepper and flour just enough until the water so the batter will stick on your hands not too thick or loose.

I’d use cornstarch or potato starch. I don’t think you’ll get the desired results with those types of flours. I think it’ll be on the gritty side

I dont think the marinating makes much difference to be honest, you can just skip the first part and make the batter, add the spices all in the batter and do the frying. Comes out the same and saves time!

So many problems with this chicken. If she understood the science of frying chicken, she would change so many things. Yolks are not good for chicken when fried. Use egg whites only. Oregano? No. Never. Also 320 is not hot enough!! Especially because when you add chicken it will cool off 40 degrees. Too low of heat will be way too greasy. It should cook at 350. So many more problems here.
