I'm going to make this tonight for my 6 boy's , definitely love the rice layer idea cause it's the perfect food to nourish and fill up my 4 teen boys and 2 toddlers appetites, I'm just hoping my picky eater toddlers actually eat this dish and not end up having it on my floors and windows LOL😂😂😂 anyways I know my older boy's will absolutely love this dish because they Love love love taco's and burritos and every Mexican dish I've made for them so far has pretty much been a hit but I've never made one with the Mexican rice inside before so I'm hoping it's filling and yummy and delicious!! I took this idea and tweaked it- Added a layer of roasted corn, pinto beans, used cilantro lime rice vs spanish rice, salted my fried tortillas and mixed a little bit of cumin and garlic powder into my ground beef seasonings, as well. Also sliced avocado for the tip-top! Oh, and I also sprinkled cotija cheese amidst the mexican cheese layer, too. Voila-it was GOBBLED UP!!!!!!!

Made this for the first time. Didn't get too much of that crunch I hoped for. I didn't use hot sauce. Used tomato paste instead of tomato sauce. Used my own homemade Spanish rice in this. Skipped the hot sauce on top. Used some of my spicy salsa. And I gotta say this recipe was freaking great. Tasted like a awesome taco salad. This lady's personality is so fun. So glad she just taught me how to make something this good. Thx for that.

I made it last night, it was soooo good. The tortillas almost burned when placed in the oven so I recommend 375 degrees & move the rack down in the oven so the tortullas won't have so much direct heat. I'll be making it again & again!
