How To Make The BEST Smash Burger!

INGREDIENTS
250g 20% fat ground beef chuck/mince (125g per burger)
4 tbsp mayonnaise
2 tbsp tomato ketchup
1 tbsp mustard
1/8 tsp white wine vinegar
Lettuce
White onion
Pickles
Brioche bun
Burger cheese
Salt
Black pepper
METHOD
1. Form the beef mince/chuck into even balls
2. Chop the lettuce, onions and pickles
3. Whisk ketchup, mayonnaise, mustard, vinegar and black pepper in a bowl
4. Cast iron skillet on a high heat
5. Lightly roast the brioche buns
6. Spray with oil
7. Put the burgers in the skillet with parchment paper on top
8. Firmly press down with a burger press/spatula
9. Season with salt and black pepper
10. Put the chopped onions on top
11. Flip after 2 minutes when crispy
12. Season with salt and black pepper
13. Place the cheese on top
14. Cover with a metal bowl for 1 minute
15. Assemble the smash burger
