I made this for dinner tonight. Marinated the chicken overnight. It was delicious. There is no need to add a large amount of water. I just used about 1/3 cup of water to rinse out the marinade bowl and added it to the pot.

Mr. Quincy, Browning is burnt sugar, as a Jamaican we used a bit of sugar in the oil and let it burn while Stirling then you put in your meat. I am "old fashioned" I still do everything the "hard way" as my younger sister told me, I don't care for the bottled and powdered stuff.

So, if I wanted to do it that way without using the browning. How much sugar would I need to burn per pound of chicken? Would I burn the sugar then add it to the chicken to marinade? I don't like my brown stew chicken super sweet. By doing it that way, would I also need to add water or stock or will it create its own juices? I like to limit preservatives as much as possible as well.

Apparently you don't get that persons can have their own authenticity....its HIS channel, not yours, not mine. He can be versatile. Furthermore, you're not the only Jamaican here, so you don't get to set the rules as to how all Jamaican dishes are to be prepared or labeled. He can be creative with his dishes, and u don't have to agree. Stop bashing your own ppl.
