i made this, it took a WHILE but it was absolutely worth it, the fancy chili powder also got me excited about cooking this. I made a side of vegan rye bread packed with as many seeds as the dough could hold without becoming a crumbly mess and it was honestly a really good combo. this recipe and your channel inspired me to go vegan and my parents said it was the best chili they've ever had even without sour cream and cheese toppings (I insisted that they not un-vegan the VEGAN chili that I had spent the whole day making) it's got incredible depth of flavor, i also tied a bundle of cilantro stems and let it simmer with the rest of the chili.

FINALLY! Someone else that knows how to cook a “real” chilli! I’m an avid cook myself and honestly, my chilli takes several hours because there’s so many steps in creating layers and depths of flavour. in my opinion, time well spent and it tastes even better the next day. Bravo! Love it. xxx

Thank you for this recipe! This is the first vegetarian recipe my husband really likes so I have started making it each week. I love the depth of flavour with all the spices, chilli and cocoa. I enjoy adding some gochujang paste, soybean paste and peppers from a jar. It also keeps well in the fridge for a few days. Amazing :)

I made this today and modified it a bit to no added oil. I’m used to that, so I was able to get a nice color on the onions and spices before deglazing the pan, despite no oil. It’s absolutely delicious and the BEST chili I’ve ever made in my life. I precooked three kinds of beans to put in though, and used fresh spices from Local Spicery. Thank you for the recipe. I purchased your book and my family loves your recipes!!! They love the Instant Pot Bolognese. 👍🏻👏🏻

A big pot of chili is in my families monthly rotation. We usually eat a vegetarian meal 3 nights a week, we started out with 1 vege-night a week but with the wonderful recipes I've discovered our vege-night is growing. This Vegetarian chili recipe is the bomb!, it's so good, I'ts a little time consuming but it is worth it, and you're right it tasted even better the next day. My families favorite chili toppings are corn-chips, diced green onions, and grated cheese, and sour cream. I'm a new fan Rainbow Plan Life, I can't wait to try my next meal.

Why, is it to be different, have people talk about you, belong to a group. Meat is not going to kill you and it taste so good and you know that. If meat were harmful to us, then where did all of the old people come from, you know a huge majority of old people grew up eating meat and to this day still do. I'm talking about lean meat, not a lot of fat and in moderation maybe 3 to 4 times a week, not every freaking day.

Great recipe! I omitted the wine, didn't have any. I enjoyed the depth of flavors, especially adding the maple syrup! My Tex-Mex father-in-law had a very similar recipe. Some of us Mexicans use those dehydrated peppers to make a red sauce for enchiladas, tamales, and other delicious foods. We rehydrate with hot water, blend, strain, & add similar spices. Just made this chili today. A few changes needed as I didn’t have everything but it still came out better than any chili I’ve made. Didn’t have wine so used some pomegranate syrup diluted in 1/2 C water instead. Also used homegrown Sella peppers instead of jalapeño. Used some fine grain polenta instead of masa harissa. Used smoked chili powder instead of making my own. Will try making my own soon though. So delicious with cashew sour cream.

absolutely love this. one addition I make to help reduce the "soupiness" of most veggie chillies is finely diced sweet potato (Yams if you're American). they add a sweetness to the dish and also help absorb a LOT of the liquid without making it dry

From a Texas standpoint, your chili recipe is spot on! I'd add that, the longer it cooks, the better. Start it in the morning or cook it the day before.

Soy sauce and red wine has been my key to mimicking beef flavors in my vegetarian (everything vegan but the Grueyere cheese) French Onion Soup. I was pleasantly surprised to see a similar technique used here! I definitely want to try this chili out!

This is a superb recipe. My brother makes a great beef chili and this veggie version is practically indistinguishable from it. I used beer in mine and it worked well. I used shop-bought chipotle chilli powder (1 tablespoon) and 1 tablespoon of ancho chilli flakes, then added some more chilli powder later when seasoning to taste. I also added some standard corn flour to thicken, because that's all I could get hold of. It worked fine. This recipe's a keeper.

Well, I figured it out and I was able to make the chili and it was so delicious! Your technique is amazing! I used that technique to make taco meat with TVP and my hubby was very impressed! In my chili I added soy curl and it was very satisfying and deliciously filling!

I‘m so happy that you shared this one 🥰 Like about 10-15 years ago, my (meaty) Chili was one of the dishes that made ppl ask me to cook for them on birthdays or similar events ☺️ (I’m still flattered, cooking is a free time passion for me to this day) I‘ve always loved all of the cuisines and am even more eager now to cook/live more plant based. I'm Lieutenant Commander Baby Mouth lol I will not be using any of those chilies or chili powders or peppers. The easy I get around this is by using an organic taco seasoning mix, taco sauce, mild "southwestern" salsa (it has corns and beans in it), and 3 different beans: pinto, canelinni beans, and (mild) Cuban black beans. I let that bad boy do it's thing and voilà! Chili for the Baby Mouths of the world lol

Looks pretty awesome. Though, I confess that I really don't mind the quicker "bean soup" chili recipes. ATK has a pretty good one that cooks up in an hour and provides a week's worth of tasty eats with everyday pantry items. However it's nice to know that there's a good vegan "real" chili recipe for those times when I want to really develop the flavors and knock some socks off!

Some constructive criticism: While I loooove the recipes from your channel, I think some of them are rather time-taking and impractical to make after a work day. For example, the vegan burrito. So I find comparing this extremely detailed recipe of yours to a random recipe on the internet to be slightly unfair. After an exhausting day, I would rather follow a chili recipe where I can throw in ingredients and let it simmer while I unwind than spend 2 hours to get the perfect dish. That being said, on the weekend when I have more time I would LOVE to make this beautiful recipe. All I want to say is that you are an amazing cook and so many of your dishes are my favourite, I just find these comparisons with other recipes unfair. Good luck and much love. Great job, Nisha! Along with onions, peppers, garlic, and spices, I personally like to add corn, vegan ground “meat”, lentils, veggie broth, kidney and black beans and let it simmer for five or more hours to really bring out the flavors. The last batch of chili I made was SO DELICIOUS and my non-vegan fiancé was over the moon. Sadly he has baby mouth and couldn’t handle the spiciness, but he managed 😂

@@RainbowPlantLife once I first start cooking (after toasting spices and all other ingredients are added) I stir every 20 mins or so for the first couple of hours. If I let it simmer overnight, I check it every 3-4 hours and stir. I also used the Gardein grounds and cooked it with vegan beef stock-it was really good! Yes, baby mouth is so difficult to deal with and I have to (unfortunately) tone down my spiciness if he’s interested in a dish I’m making 😅

I have it on the stove now. Since I have some babymouthed folks here, I cut the chili powder and the jalepenos to 1/4, and omitted the chipotles (added some extra smoked paprika for the smokiness). Regretable, but still smells wonderful. I have no maple syrup, so I used molasses instead, but the only wine I had around was a moscato, so the sweetness is already taken care of. I made this recipe pretty half assed in the cooking world- meaning I didn’t make my own chili spice but still added most of the ingredients as called for and adjusted according to what I had available. I just poured everything in and I’m about to let it start the one hour and a half simmer BUT it is already amazing. Thank you for this recipe already, even though I haven’t even sat down to eat it yet. I got my potato roasting in the oven and I can’t wait for dinner!

I made this yesterday and it’s a total winner! The depth and complexity of flavors is incredibly indulgent and yes, it does taste better the next day as the flavors meld. It’s going into the rotation! With all the chilis, I thought this was going to be a 5-alarm situation, but it’s actually quite nice. One note: The heat is cumulative and built as I ate it, so beware. 😉

Looks pretty good. I love my husband's version, which is somewhat like this, but he adds coffee and Guinness to his. And he makes his homemade spice blend REALLY spicy!!

Thanks! I’m looking forward to trying some of your techniques and spice advice. I admit I had to hit pause when you turned to canned beans. I’m coping with it…I’ll be OK. Costco has a maple syrup aged in bourbon barrels which is so good. I will also be using sage instead of bay leaf. And I love smoke so I’ll use the grill or liquid smoke. Your advice is really going to improve my chili! Awesome techniques! I’m excited to try this!

Thank you! Haha I definitely wanted to use freshly cooked beans from scratch as I prefer the flavor, but I knew that would turn off most people because there are already some steps involved here. And with the slow simmering and all the other flavors, canned beans actually do a really good job. I’m intrigued by that bourbon maple syrup, I bet that would add a fun depth of flavor!

Thanks for this, I made this earlier and really enjoyed it. Using wine and soy sauce in chilli felt wrong but definitely works! My only changes were omitting the dried chillis, and mashing a few of the beans to thicken in place of the masa harina (it’s hard to find where I live)

I also like a thicker chili , I’ve never tried corn powder. But to mine I also add, orange bell pepper,celery,grated carrots, onions and the tomatoes. The paste ,carrots for sweetness oh cocoa powder it’s really good!

Question: my wife cannot have alcohol. If I cook the wine down, can I assume the alcohol is cooked down/away? If not, what’s a good alternative? A bit of the veggie broth?
