I would freeze some of those. Like you said when making kimchi, and I make it at home, that is a huge process and it is truly a labor of love. So I would definitely have me some freezer fries ready to go at any time 😂 Love the technique. All the ones I've seen on KZbin this is probably the # one that made the most sense.

Wow! I have never seen curly fries that crispy! Every time I've ever had them in restaurants they were soggy! I think you actually proved that curly fries at home are better than at restaurants!

These are pure perfection & worth the extra prep ect before the final last fry, I will be using that dredge for fries & wedges too. We don’t fry too much but when we do it’s got to be seasoned & it’s got to be crispy.

May i ask if the results will vary if i substitute the primary fry with hot water blanch...?

Back in my day McDonald’s new what was up using beef tallow. Fries in animal fat is far better tasting. Period.
@brusso456Ай бұрын
it was peanut oil and beef tallow, when you drove by McDonalds the smell was beefy heaven. then they went to vegetable oils, when you drove by McDonalds the smell was like smelling your arm pits. that was when I stopped going to McDonalds.

do you mean truly soggy like a cold mcdonalds fry or just flimsy and lightly crisp like a fresh mcdonalds fry

It’ll be good to know how or what do you do with all that oil you used? Do you leave it in the pot and throw a lid on it? Frying at home is nice but I never knew how long to keep that used oil around. Is there a rule of thumb you follow such as smell or color when keeping a used half gallon of oil?
@ostentatiouswombat2 ай бұрын
do you reuse the same oil for all three fries?
@acooknamedMatt2 ай бұрын
Yea ofcourse. Oil can go through many fries as long as it’s kept clean and not burned.
