Happy Thanksgiving!! Welcome back to another video. Today I share with you, a sweet potato pie I normally make around the holidays. It is simple, delicious and can be served any time of the year. All ingredients and measurements below:
Biscuit Pie Crust
15 digestive biscuits or 1 3/4 cups graham cracker crumbs
1/2 cup or 110g unsalted butter (melted)
1/4 cup or 50g brown sugar
You can also use a pre-made pie crust for this recipe
Filling
2 medium-sized baked sweet potato (also known as yams and orange in colour. Wash and dry sweet potatoes, then wrap in foil and bake for approx. 1 hour and 15 mins.)
1/2 cup or 100g brown sugar
1/2 cup 118 ml double/heavy cream (can be substituted with dairy-free version)
1 tsp or 5ml vanilla extract
2 large eggs (beaten)
3 tbsp or 23g all-purpose/plain flour
1 tsp or 5ml ground cinnamon
1/2 tsp or 2.5ml ground nutmeg
Topping
Sprinkle 2 tbsp or 30ml brown sugar on top
Bake pie for 40 minutes on 350F/ gas mark 4
Serve with ice cream, cream or whipped cream
