KUDOS for reminding us of Graham Cracker crusts. They make some of my FAVORITE crusts for jelled fillings. EVEN MORE KUDOS for reminding us of ARROWROOT biscuits: I remember them as 'Animal Crackers' in the circus wagon box. I might add a few high quality ginger snaps to the mix.

A wonderful graham crust is with a small amount of butter and egg white. You can make it thin and it gets crispy in the oven. It holds together too.

Been doing it similarly for cheesecake since 1960's. Evolved to use brown sugar instead of white, a little cinnamon and nutmeg, a portion of finely chopped walnuts. Will try Glen's prebaking for the next round! Sour cream cheesecake filling goes very well with a graham/nut crust. Crumbs need a little higher proportion of butter to be able to cling to vertical sides of a cheesecake pan. I grease the pan with a stick of butter to start.

This recipe is EXACTLY correct. I've seen some that leave out the sugar, others that use more butter, they don't work as well, IMO. I've also heard that gingersnaps make a great crust for some pies... especially pumpkin.

I really enjoy your videos. I'm a widower now and I am attempting to make some of my favorite dishes and desserts. This video is so timely. The other day I was at supermarket here in Clarence, NY and I bought a cheesecake with a graham cracker crust. I don't know where the crust was, and it was also bland. That made me hankerin' for a good Graham crust. I didn't know it had to be baked. Thanks for the recipe and clarification.

@@shibble Glad it works for you. They never do appeal to me...but I grew up with a grandfather who baked for his restaurant business. And my mother made old-fashioned lard and butter crusts for her pies. I never looked elsewhere. Except that James Beard, a great American cookbook writer introduced his readers to a cream cheese and butter crust for quiche. My wife and I have followed that recipe for a good many fruit and gelled pie fillings.

I am enjoying your pie series. I suggest you try a Biscoff pie crust. No sugar needed, just add butter. Great with cheesecake too.

In the UK we don't have graham crackers. We use "digestive biscuits" instead for pie crust/cheesecake base recipes! Digestive biscuits are also readily available all over East Asia.

In the United States, we can buy 'wholemeal' biscuits made in Britain by Carrs of Carlisle and they work better than the 'new recipe' Nabisco Graham Crackers. For me, the cane sugar and butter in the original recipe was 'tops.'

Once made a cheesecake using a crust like this. However, it used Oreo cookies (classic, not double stuff), no additional sugar, and butter. Probably a bad idea for the fruit pies to come, but for any chocolate or peanut butter pies, I bet it would be top notch!

In France, we (at least me) would use biscuits called "Petit Beurre", which means "little butter". Ironically they're quite dry biscuits and are only enjoyable with a hot beverage.

@@dogsbody49 Apparently, British and Scandinavian viewers who speak English use the term 'digestive biscuits' for wholemeal biscuits. Dr. Graham's process produced the sweet, nutty wholemeal flour.

Saltine was the Nabisco brand of crackers, but they were too successful in their marketing and so it became a generic term.

My mom has been making this pie shell for as long as I've known her. Also Key Lie pie. She makes the best cheese cake I've ever tasted. I hate cheese cake that sits in your gut like a rock. Hers is light and creamy.

I used digestive biscuits and had an 8.5 inch something pan. When I put it in the oven, the middle began to puff up, and the butter layer was visible on top. What is the reason for this? Should I not bake it and just put it in the freezer for a few minutes?

Real New York cheesecake never has a crust. Although when you see get in a restaurant anywhere outside of NY, it invariably has a graham cracker crust. So, maybe you should trying doing it the NY way. And go crustless!

@@RobotPorter Well...yes: but the batter makes its own crust, a thin and lovely thing! AND in New York City, I have just as often found cheesecake with a crust. So, 'go figure.' Any way it comes, with a proper cheese filling and, maybe a fruit topping, this is Classic American Dessert.
