Apparently a lot of Italians as well as Spanish (and Portuguese lol..) migrated to South America during the colonialism.of the Americas, hence why you get the best mixture of all the Latin cultures and indigenous traditions .. to get the best mixture of classical flavours blended to make the best food, call it Italian, Spanish, Mexican, Mayan, Portuguese, Brazilian, Argentinian, Inca, Aztec, the result is the among best food on the planet.. 😊✌

I am Black American with roots in Nigeria, Haiti, Jamaica, etc... I make a mean guacamole. I add ripe avocados, red, sweet, and green onions, cilantro, a tablespoon of green peppers, a cup of tomatoes, a dash of garlic, a tablespoon of sour cream, juice from one lime and teaspoon of olive oil, and jalapeño pepper to taste and a 1/8 of cayenne pepper.

I like to use a butter knife to score the avocado in it's halve. Then when you scoop it out, it's already chunky. When you stir in the other ingredients the consistency becomes perfect.

Rossana, I just used my molcajete I purchased at your recommendation, and cured/seasoned per your instructions. I used it to make a salsa verde and this guacamole tonight. It's the same guacamole recipe as mine, but the molcajete and the grinding of the onion and serranos made this the best I've ver had. Thank you!

I had to go all over to find mine. We have several Mexican grocers here but I still had to go to 4 shops to find one, and the one I got wasn't as nice and deep as yours is. Mine is about 1/2 as deep but the same diameter. They also were missing the pestle except for one, so I got that one. It looks like a pig kinda but I think it's a bull. :P I am so happy using it, I don't have a blender and I didn't want to buy a blender, the molcajete is so much better. Thanks for these great recipes.

HUGE thumbs up for the Molcajete . I love that you put in dried Mexican Oregano . I also like to grind pepper corns and coriander seeds with sea salt in the molcajete to put over the top .

Buen dia, les escribo desde México. El tip para que el guacamole no se oxide, y no se ponga negro es el siguiente: Al terminar de preparar cualquier estilo de guacamole, añadan unas 4 o 5 gotas de jugo de limón, pero no más. Con esas gotas de limón, el sabor se vuelve exquisito, y no se pone negro. Otro truco para que no se ponga negro, es dejar una o dos semillas de los aguacates dentro del molcajete o recipiente donde sirvan el guacamole. Por último, como guardar una mitad de aguacate que no se usó, para que no se eche a perder??? Sencillo: se guarda la mitad, o porción sobrante con la semilla del aguacate, y se tapa con la cáscara de aguacate de la mitad consumida. Espero que estos tips les resulten útiles. Saludos.

I cannot wait to make these. I do not have a molcajete, but I did make your salsa recipe (the roasted one) and it is truly the best salsa I have had since when I lived back in Houston. You forgot the part that when you pop the avocado seed off of your knife that it has to roll off the counter and onto the floor and slide all the way across and under a cabinet or a refrigerator 😂 I don’t think it ever taste quite the same unless you have to chase the seed across the floor.

Several of my Aunts are Mexican. They each have their own style of cooking. Probably due to being born in different parts of Mexico. Problem is, they wont send recipes. We all live in different states. They always say, "You have to be here when I make it". So, us Weto's have to find good recipes that taste like theirs. Liked, saved and subbed! Now....... on to some of your other recipes!

I love serrano peppers too. But I do not like cilantro at all. The chefs of the world say you either love cilantro or you hate it. To me it tastes like soap. Oh well I can leave it out. I do love guacamole so much. And I make it just as you do the first way minus the cilantro. So yummy. Now I must try the other 2 ways of the dish. Subscribed. I'm always looking for authentic recipes for dishes from various cultures. Too often, recipes have been adapted because it used to be hard to find authentic ingredients (especially for Asian foods). Today, we enjoy unprecedented access to so many foods from around the world, that it's great when people from these cultures come to KZbin and share their knowledge. So thank you for that. Also, I enjoy hearing the stories that go with the recipes. That said, I'm really hoping that you will someday post a tamale recipe. I really want to learn how to make authentic tamales. I'm sure there are other videos explaining the process, but having your take would be nice too. Also, I have a pretty good mortar and pestle that I bought for other recipes, I assume that's close enough to a molcajete for the recipes here. Not sure if there are differences between the two.

Depends, a molcajete is made from volcanic rock. If yours is not and that's what you have, I would still go for it! 😊
