I live in Minneapolis, MN. I purchased your sriracha a while back. Some stars aligned. It's my wife's birthday, my local co-op had some decent brussel sprouts, I had just binged a bunch of your videos, I had the day off. Confit garlic, caramelize some Vidalia onions (squat and sweet from Georgia), shallow fry (works just as well if you're attentive). You guys aren't playing games. Well done.

Brussels Sprouts are one of my favorite vegetables... I usually steam them in their own liquid until al dente, de-glace them with a butter/fish stock emulsion and add a little pesto instead of the hot sauce. Sometimes I add some finely chopped sun dries tomatoes and fresh parsley as well, especially when eaten with grilled fish in the Summer. Always a winner over here...even with the kids...

I always check KZbin periodically for updated Brussels Sprouts videos in search of the truly delicious restaurant quality ones. Can't thank you guys enough for making this video! Seriously some of the best sprouts I've ever seen made and really wishing I could try them! Subscribed!

Good quick take on sprouts. I tried something really weird last night but I remembered your weird combo bit from another video. Rosemary infused (3 month) olive oil on top of a green apple. Could do it as palate cleanser before a lamb dish or with fish as a light app. It sounds weird but it tasted good

Brussel sprouts, cauliflower, broccoli, cabbage, kale, etc are all the same plant, Brassica oleracea. Selective breeding has given us all of these varieties of the same plant.

My go to way is to cut them in half, fry them in garlic oil and margarine (a butter like one), put some smoked tofu and onion with em, salt, pepper, sugar, nutmeg. some jus and siracha if something like a sauce is wanted

I love brussels sprouts so much. Cook em pretty much any way and I'll enjoy them. It's a shame they're so damn expensive in NZ (well most things are)

why do you use butter emulsion instead of just butter? also what is butter emulsion? :)

It's basically just butter and warm water blitzed/whisked together to create a sauce. It works better as a base for sauces than just pure melted butter because it's thinner and allows you to cook at much higher temperatures without the butter browning or burning.

Old comment I know but if it’s a butter emulsion there should be enough fat in there to keep it crispy. Things don’t lose rigidity and crispness in fat unlike water

The issue's with sprouts isn't so much the flavour it's because they upset a fairly large part of the populations stomach's , they are the same family as cabbage , brocoli ect... some people can eat them some they bother , I love them cooked in about a hundred ways 😂 my wife lays on the couch crying for two days 🙄

While this 100% will taste great, everyone NEEDS TO understand that with all the sauces etc added at the end, you are NOT going to taste any sprout. --> I'd be far, far more impressed with how these sprouts taste...properly cooked but with the minimum of seasoning, and NOT something layered in sauces/flavours as a passing conversational piece for rich diners. Then again, this is a business and I fully understand what's happening here.

Deep fry brussel sprouts? Then cover them in butter? Is this a joke? Did your diners call the next day complaining of GI issues? Maybe do a video next of how you prepare bacon, spoiler I assume it's deep fry it.

Obviously you have no knowledge of growing sprouts. You will always get a better sprout if they are exposed to frost, this changes the taste immeasurably. You can also freeze them briefly to achieve this metamorphic character, but until you have grown your own and harvested them yourself at the right moment, nothing else comes close. Eat them raw for the best taste👌

@@beanbag9696 The original Brussels sprouts had a lot more bitter tast. So growers cultivated new varieties that are a lot sweeter. They even explained this in the video around 0:50

My guy. The farmers have bred them so that they would sell better in shops. They were talking about how the flavor had changed from war time to now. Thats a lot of selective breeding; they've fried it for texture and used butter cus it tastes good Just because you glaze an apple in caramel doesn't mean it deletes the apples flavor

@@perfectplates It is bad enough that Brussels sprouts have been cultivated so they lost most of their (bitter) taste and people who enjoyed them have to go to specialty shops to find the real ones. I find cooking is about enhancing the flavour of your ingredients not to mask them. Besides, this recipe might be OK for a restaurant since people don't go out every day. But for every day cooking this is really unhealthy. You will have no arteries left if you treat your veggies like this.
