I make gluten-free cornbread using yellow self-rising cornmeal mix. It already has salt and baking powder but no flour. One egg, butter, milk to finish it off. Bake in 425 degree oven. It is great for those who need gluten-free bread for their soup beans, etc.

I use Jiffy as well but always use buttermilk and an extra egg. WHAT A DIFFERENCE! (and a little extra sugar - 2TBSP) I let the butter melt in my cast iron skillet and pour some of the melted better in the batter. DELISH!
