Chef, I am terribly sorry. I have been watching your videos for 7 years and have been loving your content throughout; yet, I have never commented before and do not like your videos enough. The foodie police might be after you, and Mexico might not let you in after this, but this is what I'm here for. Unique, imaginative, delicious looking food, who cares if it plays by the rules! Nduja and Kimchi are both great, but I've never had a chance to cook with either of them before, so looks like you've just given me an excuse to get hold of some. Nice one JQ, glad you're back with us on the regular!

Looks amazing, chef. Crispy on the outside, and an awesome goop of delicious in the middle. I'm gonna borrow some of this technique, especially the butter toasting and the amount of sausage you used to season the cheese.

You make a very good point- if it tastes good, who gives a damn if its not authentically whatever. As long as you're not declaring stuff to be representative of a certain culture's cuisine when it isn't then fine, you're just being inspired and creative, who cares

Adding pickled veg with melting creamy cheese is a great idea. How about a brunch version by switching the sausage & kimchi with lardons and FSG preserved mushrooms (Szechuan mushroom slices)...... ie. spicy ham and mushroom?

I'm guessing the Nduja would be similar to Mexican Chorizo, so a good substitute. Love the Korean influence in this as well, nice.

This is the same flavour combo as a real deal quesadilla, slightly fermented taste coming from "fresh" cheese and cal in corn tortillas and Mexican chorizo is vary similar to 'Nduja in almost every way, often in the UK we think of Spanish cured hard charcuterie, im not talking about that. You can find this effect in Mexico City for sure.No foodie shame here these flavours belong together.

These kinds of recipes [which are basically vehicles for melted cheese and spicy meat inside of bread] are my ideal drunk food. The fat, salt and carbs are ridiculously unhealthy, but this sort of thing tastes too good that everyone has to try it at least once.

Looks great. Expect you made the tortilla? These supermarket tortillas have an endless list of unrecognisable ingredients for what should be a simple recipe.

this is a quick indulgence recipe, you need ready made. Best wrap I've found is Gran Luchito. Also perfect for frying pan pizza using the hob & grill method
