You compared this to a whiskey sour, but I see it as kinda like an Old Fashioned mixed with a Mule. And I've been loving Mules lately so I'm excited to try this.

I simmer the honey, ginger, and water together and make just one syrup. much easier

how many bottles of the ginger syrup will i need for 100 guests? also, where can i get the honey syrup to purchase?

To make 100 of these cocktails you would need 50oz of each syrup. That equals about 1500mls or two empty 750ml liquor bottles. So 2 bottles for each syrup. As for the honey syrup, I wouldn't purchase it because it's so incredibly easy to make, just mix water and honey!

What do you think about mixing the Islay in right away? Im kinda worried it will overpower the whole drink and you will taste the smoky part only for the first few sips and then it will be completely gone

It's mostly for the aroma of the islay scotch. But if you want more of a peaty flavor throughout the drink, try replacing some of the blended scotch (.25oz or even .5oz) with the Islay scotch. Then still float the islay on top as well! If you're a fan of Islay scotch I bet that would be tasty!

I like using makers mark and then add 1/2 oz of Ardbeg (10yr) scotch! This looks really good too.
